    Hey Friends!🌞 I tried to be be zero waste this week & I wanted to show you everything I ate during this time! I made lots of simple vegan meals that are quick to throw together & enjoyable. I showed you a full grocery haul & told you how much I spent (CAD) to give you an accurate representation of how I used my money!
    * I'm not a zero waste expert nor was this week perfect but I eliminated so many things going into the trash by making small changes! *
    Remember being perfect isn't the key, it often leads so shame & guilt when we feel like we aren't perfect. This movement is about trying your best & understanding that your choice make a difference but the whole world isn't on your shoulders. This has to be a global effort!

    Roasted red Pepper Soup Recipe: / cyuolawdwds
    Tahini Dressing: (day1)
    2 tbsp tahini
    1 tsp maple syrup
    1 tsp garlic powder
    3 tbsp water
    1/4 lemon
    salt to taste + any other spice (dill, onion powder, paprika)
    Simple Stir Fry Sauce: (day2)
    1/2 tamari
    3 tbsp maple syrup
    2 tbsp rice vinegar
    1/2 lime juice
    1/2 tbsp sriracha
    Oat Milk: (day3)
    1 cup rolled oats
    4 cups cold water
    1 tsp vanilla
    1 tbsp maple syrup
    Simple Lentil Curry: (day3)
    2 cups chopped red cabbage
    2 parsnips
    1-2 tsp sesame oil
    1” fresh ginger
    1 cup kale
    3/4 cup lentils (before being soaked)
    2 cups veggie broth (I use the liquid I cooked the beans in)
    3 tsp Egyptian curry (or your favourite spice)
    salt to taste
    Taco Beans: (day3)
    1/2 cup soya beans ( before being soaked )
    1/2 small onion ( diced small )
    1-2 cooking oil2 garlic cloves ( minced )
    1 1/2 tsp cumin
    1 1/2 tsp smoked paprika
    1/4 tsp chilli flakes
    1/2 tbsp vegan butter
    1/4 cup veggie broth ( or use the liquid you cooked your beans in )
    - heat pan on low medium heat & add oil with onion & garlic. Cook until translucent
    - Add spices to your pan then add beans, vegan butter & veggie broth. Cook on low for 10 minutes
    Tahini Pasta Sauce: (day4)
    3 tbsp tahini
    1 tbsp white balsamic vinegar
    1/4 lemon
    salt to taste
    Butternut Squash: (day5)
    1 small Butternut Squash
    1 tsp salt
    1-2 tsp olive oil
    1/4 cup water
    2 cloves garlic (minced
    1” ginger (minced)
    3-4 tbsp stir fry sauce
    - Peel and dice small butternut squash
    - Place it in a baking dish with salt, olive oil & water
    - Bake @400F for 20 minutes
    - Take out of the oven add minced garlic, ginger & a couple tbsp worth of stir fry sauce. Bake without the lid for 10 more minutes or until squash is fully cooked
    - Add a touch more stir fry sauce & serve with rice

    I was born in Poland and usually the sauerkraut used has been heated first and sauteed with mushrooms, onions and spices. Let cool and then stuff the pierogis, then boil.
    It's common to eat them with beetroop soup and carmelized onions.

      I want more people to know it's not about perfection, its about doing what works best for you. As controversial as it may be in the vegan community, I think more people will make the shift and stick with it if they don't have to be perfect 100% of the time! Lots of love💛✨

    PIEROGIIIIS!!! As a polish i am so glad that you liked it. Here, we do not use potatoes to make a dough, with a dough like this we make "kluski śląskie", "kopytka" or "knedle". But we do have pierogis filled with potatoes, onions, and cottage cheese "pierogi ruskie". Exploring diffrent cuisines is sooo freaking good < 3

      exactly, i was shocked when i saw she was using potatoes to make dough but i'm also shocked that people are using cottage cheese to make pierogi ruskie so you learn every day i guess 😅

    Bean tips: You don't need to soak red lentils. Just cook them the same as rice. Don't add salt until after your beans are cooked. The salt makes them stay hard. You can add a tiny bit of baking soda to make them cook slightly quicker but I don't think its worth it.

      I might be wrong, but I believe soaking lentils and other legumes before cooking them makes the nutrients inside them more bioavailable :)

    hi, you can eat the radicchio raw. just chop it as you with cabbage and dress it with olive oil, salt and balsamic vinegar (that's how we mostly eat it in italy)

    UPDATE: I MADE IT for my whole family IT'S AMAZING WE LOVE IT!!
    edit: Also keeping a freezer container full of veggie scraps for broth is SUCH a good idea I am definitely going to do this now.

    Okay but smoothies in winter hit different!
    I always crave smoothies in the winter and hot oatmeal bowls in the summer and I have no idea why but it's been like this for years XD

    I wish I could live like this. Where I live I don’t have access to a bulk food store and a lot of veg comes in packages 😢. There’s also no way that as a student on a budget I have 80+ dollars to spend on groceries.... my weekly groceries are 20 dollars at the max. But I am vegan, and I use mostly dried beans as my protein source instead of buying meat replacements, so that already reduces the amount of waste created by packaging. I also go to multiple different grocery stores to buy vegetables without plastic (for instance some stores sell cucumbers without plastic wrap and others only sell with the wrap). I bring my own reusable bags for anything that you would put in a bag to weigh (like fruit). I’ve also been exclusively buying clothes at the thrift shop for the past three years and only when I absolutely need something. My grandma also taught me how to mend clothes ❤️ so I don’t really throw anything out, twice a year I just go through my closet to see if anything needs mending and then I sit down for an afternoon to get it all done. I just think the most important thing is to do what you can. It doesn’t have to be perfect as long as you do your best.

    a great way to use radicchio is to shred it and add into your salads, it gives them a bit of a kick cause it's a bit bitter but with a bit of vinegar or lemon juice is very good!!

    Hi! If you wanted a store option with less packaging thats on the cheaper side sprouts is a good option. A lot of the produce doesn't have packaging and they have a really big bulk section and you can use your own bags and jars. Just get your jars weighted up front when you get there. I know windco also a good option too and they tend to be even cheaper

    Thank you for putting bean liquid in your soup. It has so much flavor and adds thickness. I'm always telling that put to drain your beans in the instructions to Not drain their beans in hopes that they or their followers might listen to me. Vegan soups have so much more potential when they have a better texture and flavor!

    Radiccio you eat raw as in salad. You can grate it as you would cabbage, and eat it with cabbage or any green salad ☺️

    You don’t need presoak red lentils :) After they will be too much mushy, you can just wash them

    Another great video ☺️💗 be careful about not washing your produce, especially the greens, even if it says triple washed or prewashed , they are often culprits of e. Coli, listeria, etc outbreaks literally every week!

    I think the Pirrogies are more like German "Schupfnudeln" od "Krautnudlen" , they look really delicious though.

    I absolutely love your videos and have become inspired by the way you eat what you want and have used a bunch of your recipes already! Does your oat milk separate when you use it in hot drinks? Whenever I make mine it separates in my tea and coffee!😕

      I didn’t find it separated when adding it into hot drinks but it doesn’t do well being heated up over the stove! ( using quick oats and really cold water will help the texture! )

    Pierogi tip: for the dough you only need flour, oil, boiling water and salt. No potato! :)
    For my favorite pierogis use potato in the filling together with smoked tofu and fried onion. Happy to provide more info as a polish pierogi expert

      No! I actually bought a big bag from Iherb, I gave a bunch away to friends / family and then store mine in the fridge to keep it fresh!

    6:00 Radicchio is better raw. It's like a bitter crunch...cooking it makes it more bitter! It's really good for tortilla alternative or just chopped in a bowl

    Hey Julia if you like lentils, you should look up khichdi, I am very sure you're gonna like it. (Indian comfort food) very easy, very tasty, very healthy.

      Trust me I know that, which in itself is a bit backwards in my head. Many people ( in the vegan community ) don’t realize how they are segregating themselves and making it harder for people that have never been exposed to Veganism. When we all can accept people and explain our point of view without attacking the other person then we can create a better and more inclusive environment for everyone. It’s never about being perfect, it’s about trying

    7:30 It is *so* annoying when produce is packaged in plastic, right? We can really only make the best with what we have available because sometimes it is just out of our reach to buy plastic-free if it is much more expensive :( I am lucky that in Poland there are actually quite some stores where the majority of the produce is without packaging but still, there are some which I cannot buy zero-waste literally anywhere...
