I had the exact same issue trying to get rear spacers to fit my Mk2.
I found a nice solution that's also an upgrade, I used Polo 6n2 rear stub axles, wheel bearings and discs. You then have a more 'standard' rear disc and the spacers fit perfectly. The other advantage is that you loose the awful Mk2 rear wheel bearings.

Mate the fitment you got is perfect to don’t them tuck just get some stretch wheels and get that lip on show

I'm playing it safe man until all of it is back together and I've used the air I can always build up spacers to get the fitment back

Try and get in contqct with retro wheelz belgium to redrill the wheels. These guys do magic with wheels.
