  • This is something you do not need an introduction to. A beautiful crispy appam. Everyone in my family loves it; I am sure you will too.
    2 cups raw rice (red or white)
    1/2 cup coconut milk
    Baking powder

    Love you for your prompt replies always. Can balance batter for appam be kept in the fridge? If so, how long and how to use it again?

      Hi Asha, I have always done just enough but think you can keep the left over batter for another day. I would recommend not adding the coconut milk to the batter you want to keep in the fridge. Leave the batter outside until it fully cools down then add the coconut milk and start making the appam. Hope this works. Thanks dear and take care.

      Hi SreePunitha, My mum used to make without the baking powder too, but unfortunately it's very cold in here and the appam batter needs a bit of help to rise hence I add the baking powder. Thank you so much for your lovely comments.

      Dear Macray, you try warming up oil in your 'appam pan' (use it to fry things in a different pan with the same oil) and rub onion and fry eggs few times. Good Luck!

    Hi Genie mum, thanks for the recipe, I am in the middle of making this recipe. I have ground the rice and mixed in the paste, baking powder and salt. It has been sitting with cling in a warm place for the past 6 hours but I am not seeing any bubbles at all. Should I put more baking powder?

    I have a fabulous non stick pan, coz when APAM is cooked, all I do is give it a little 'loosening' and the APAM slides out!!! I have trier ducking the heat, I will try with your tips. Thank you. It is unfortunate that I was not interested when my mom (from Sri Lanka too) was around!!

      HI Roslin, if you are using the non stick chatti keep the lid closed for about 5 mins or so; as keep opening the lid often to check if the appam has cooked enough, the air goes in between the appam and the chatti and the out come will not be crispy. Good luck and thank you.

      Hi Kanaga, Instead of adding water to grind the rice you can add coconut water. No measurement needed. Add enough water or coconut water to get the correct appam batter consistency. You can still make the kanji. It will make the fermenting process quick. Good luck and thanks so much for your comments.

    Hi! Do you add the boiled runny batter of two teaspoons to the Appa mixture hot or once it's cooled? I'm sorry but I don't understand Tamil.. I happen to find this video accidentally and I think it's quite an easy way to make appa than the Sri Lankan style. 😊

      Dear Chathuri, You need to add the boiled runny porridge when it's warm, not hot or cold. This is very easy way of making appam. Make sure the batter ferments and also the appa batter shouldn't be thick. Good luck and thanks so much for your lovely comments.

      @@geniemum652 I've tried it! Mine didn't rise as beautifully as yours. After overnight, still no bubbles and the water separated, so I mixed it and left it for an entire day, still not risen, not sure why but it smells right. So I drained the floating water and just went ahead and cooked some just now. It's soooo goooood! 👏🏾 Thank you so much! 💖

    Hi Genie Mum, we are from the UK and we tried your recipe. It was really good, but the sides were quite hard. What can we do about this?     Hi Genie Mum, can I use yeast to ferment instead of kappi as it's winter now? Or should I use both to assist in fermentation? Also, can I use Idly rice instead of long grain rice? Thanks.

      Hi JR, Winter is a real tricky time for these kind of food making. Adding yeast will definitely makes the fermentation faster so go for it. I am sure idly rice will do the same job without any issues. Let me know how you go if you can. Good luck and thanks so much for your comments.

      Hi Dear, the purpose of adding the baking powder is to help the fermentation and rising. So you don't need to add it if you are using yeast and cooked rice. I would recommend a day old rice though since it's winter at your end. Hope this helps, thanks again JR.

      Hi, I used 1 cup normal rice, 1 cup idly rice, some cooked rice and yeast. It's fermenting now. Hopefully it will ferment well. Keeping my fingers crossed!😊

    Thanks Genie Mum. Lovely looking appam. The shiny soft centre is what I've been looking for, just like my Mum's appams. Do you know why part of the batter is cooked separately? Is it science or just a custom. Also, can I use dry yeast to help the fermentation? In my young days I lived in Kandy, but now I live in the UK and there may not be natural yeasts in the air to start the fermentation. Unfortunately, I don't speak tamil, so the subtitles are invaluable. Thanks a million. Looking forward to giving this a go.

      Hi Ross, When the batter is added to the hot little pan and rotated around it creates a thin part of the appam on top and the rest of the batter ends up in the bottom. Since the top part is so thin it becomes crispy and the bottom becomes soft. You definitely can try with yeast. Thank you.

    Long grain rice means is it basmati rice , or will it come in idly rice ? I don't have raw rice dear, first time pls say me which rice to use

    Tried it 3 times but it didn't quite work. A few questions 1. Do you throw away the water that is use to soak the rice or you add it to the 1 cup of water ie 1 cup of water to grind rice or 1 cup plus water to soak to rice 2. Can you confirm that it is 1/4 tsp and not tablespoon of baking powder 3. When cooking the batter, the subtitles just say add 1/4 to dilute the cook batter. Would it be 1/4 cup water 4. When you ferment for 5 to 6 hours, what kind of temperature are we talking about ? thank you.

      Hi Michelle, Sorry to hear that the appam didn't turn up well for you. The 1/4 cup there was meant to be water. No I didn't add the water used to wash the rice. It's all fresh water being used for this recipe. The fermentation to be done in room temperature.20°C bit more or less. Hope it works out well next time. Thank you and good luck Michelle.

      Hi Suman, you can lightly apply oil to a non stick pan and it will last for about 3-4 appam do not apply a lot as this will make the appam batter not sticking to the pan. Keep the heat in low to medium and adjust while cooking if need to. Hope this helps. Thank you.

    May I ask: 1. For the amount of ingredients stated in this clip, how many pieces of the final product would there be? (assuming the wok is about the same size as the one show.)

    Hello Genie mum ..... subscribed your channel just 2 days ago . Been looking for a perfect Srilankan appam .... just loved the way you explain and the appaam’s looks so tempting .... nice really nice . Made the appam today ... it was little crispy outside and the centre was soft ( but it had a sticky ... tender coconut texture) ... but your’s looks really puffed up and spongy . Really want to get the same texture as your’s . 1. Long grain rice .... do u mean basumathi rice or any raw rice can be used??? ... I used mavvu raw rice ( name of the rice) . Can I use ponni or basumathi ? Kindly guide . I make in a non stick pan ... it comes of the side soon , and I have to keep it really watery for it to stick to the sides ... waiting for your reply ...       Dear Madhavi, Thanks for subscribing and trying my recipe too. I used Basmati rice for the appam but sometimes I would just use any white long grain rice. Also when you make it in the nonstick pan the texture will be slightly different. I am writing the below thinking they might have been the cause of your sticky bottom. The pan shouldn't be overly heated if it is, the batter at the bottom gets cooked quickly and the top part wouldn't be cooked equally and end up being sticky. If the appam doesn't stick to the pan add the batter to the pan keep it in the stove for 5 seconds and then rotate it; when the sides are heated the batter would stick to the sides easily as well. The secret of getting crispy appam with the nonstick pan would be to keep the appam covered with the lid for at least 5 mins and then open it. If you open the lid in the middle of the cooking the appam will come off the sides and the end product would not have the crispy sides. Hope these help.
