    You know,,, I've been outdoor cooking for over 50 years. Offsets, direct heat, gas grills, Weber Kettles, Cookshack smoker etc etc,,,,, I never thought I knew everything because I've watched a ton of videos over the last few years and have picked up a lot of tips and tricks. Babyback Maniac, TRoy Cooks, cooking with Ry, Meat Church, Franklin BBQ to name a few. But never have I ever learned as much as I've learned from your videos. Your style, presentation, knowledge and sense of humor are what draws me back time after time. I appreciate your videos very much. Signed, retired oilfield trash from Fredericksburg Tx.     Hi Bradley, Brady here,but I’ve been called Bradley 1/2 of my life. I’ve been BBQ’ing Brisket for 20 years, but never thought of using a Select brisket for chopped beef sandwiches. Thank you for that! But the Homemade pickles and thin sauce is sent from “Bradley the BBQ Gnome” and that’s a Beautiful thing!!! You and Jeremy Yoder are my dudes! I watch many other BBQ Channels, however you 2 are my Sinai’s the two that I listen to and take notes from. I was a welder by career for 45 years before a massive injury 3 years ago took my career away 15 years early. I hope that I can get back into my own shop so I can build my smokerz and grillz for our new home.
    I just want to thank you for all of your blessings that you have bestowed upon me. Someday I’ll shake your hand and thank you properly.

    Mr. Robinson - I’m visiting Austin from Toronto Canada. And my first stop from the airport was LeRoy & Lewis. I almost died in the heat but the food was worth it! The beef cheek was insane! I also saw the first Chud box - thanks Travis. 🙏🏾. If you visit Austin definitely check out LeRoy & Lewis the only thing better than their awesome food is the people cooking and serving it!

    I've been cooking select briskets for years. I splurged one time, and got a Prime, and my wife did notice a difference. But then she got mad when I told her how much I paid for it. The Bark is what she loves.

      @@altongehringer9858 i guess they didn't dare try that in Texas. Bbq of any kind is a tough sale here. Seen a many a place go belly up. And most that are still around need to. Live 3 miles from Van bbq. Opened around 85, if i remember correctly. It was always hit and miss at best. But they made a decent living. The old lady was almost 100 when she finally found someone to pay the one million price tag she was asking. Dot heads from the big city. They tore the old building completely down and built new. I've eaten there two or three times since then and it's always subpar. Never more than a handful of cars there during the busy lunch hr. No doubt it will be closing soon. Hard to make a living in and around the small towns of south Texas. Everyone is a bbqer around here. Same goes for myself. I'd rather cook my own, than go out and buy it.

    Martins are from my hometown, and the only way they’re better is right off the line. They have a bakery/store at the main plant. It’s like heaven having an open kitchen

    Great video! I’m glad you mention the history of chopped beef in Texas. The popularity of Central Texas BBQ makes everyone think Texas BBQ has always been like that, but that’s just not true. I grew up in North Texas and chopped beef was way more common growing up. Yes even bbq sauce.

    My mom used to bring home a pound of chopped beef from Underwood's in Brownwood, TX, along with their rolls and some pickles/onions. That's a nostalgic central Texas dinner for me.

    Nowadays select brisket is about all I can afford so I ain’t wasting it on chopped sammys. I’m slicing it up like it was top notch. Most people never know the difference, or else they are good liars. I did my first overnight rest even though the interweb said it was a bad idea. It made a big improvements that select brisket. Thanks for your inspiration!

    Years ago I was luck enough to get some BBQ from the John Mueller Meat Company in Austin. Amazing food. The brisket had an amazing crunchy peppery bark while the meat still being tender & juicy inside. This reminds me of that.

    Glory to Senor Chud and what really is a so-called "cheap cut." BBQers like to say BBQ is morphing "cheap cuts" into "delishiousness," but as a life long griller and smoker of meats, I have never considered even a Choice brisket to be a cheap cut. Pork shoulders and pork steaks are better to me any day flavor wise and really are cheap. So good on Brad for showing real skill so well cooking a humble and actually cheap Select brisket. I'd wager if Brad did his regular full trim and sliced that normally, 9/10 folks couldnt tell that Select from a Prime. And glad to see bootsnakes!

    Try grilled brisket tacos. Slice brisket thin and season with lawry's. (Watch for flare up's) chop it up and place on a corn tortilla with some green gallos sauce. (Cilantro, onion, and lime optional)

    Good to see someone smoke a brisket that most weekenders can afford. Harry Soo does a video like this from time to time. And yes, chopped beef sandwiches are awesomeness. Also, put some of it in a processor and make brisket meat spread.

      Costco been selling prime briskets for $3.99/lb (Maryland) for last 2 months. So Prime can be affordable, sometimes.

      Consider cooking Prime or Wagyu low and slow in your backyard smoker such as at 225 in order to allow the marbled fat to render out.

    What I would love to see is a couple different smoked bbq beans recipes. Maybe a savory and a smokey. Please don't use canned beans or if you do please make a video using dried beans as well. Looking forward to it!!

    Yes, I am also a Martin's buns fanatic. Best buns out there. Better springy texture than brittle white wheat buns. I covet them for my pulled pork sandwiches and Martins hot dog buns for my sausage dogs.

    Having a cookout this Saturday and me and my girlfriend made a trip to Costco Monday. She went to the bakery to get the buns and rolls while I scoped out the meat. She comes back with these dry dusty looking things and I made a face and she immediately went back and got the Martins! So glad they made it to Texas!
