The HSTs are still plentiful and in service in the UK, and the Adelantes, at the time this video was made, were new and expensive, so they didn't want to damage it. I agree with you, though, the HSTs are somewhat historically important in British railway history. At least one or two sets should be preserved.
There was probably loads of spares for the HST as they were a very large fleet at the time and had been in service for decades, whereas there probably weren’t many Adelante spares and they would have been rather expensive.
You probably won't have to worry about emergencies on the Adelante cause you'll be going nowhere
