    I learned a tip from somewhere...When you squeeze out the zucchini, you can use a potato ricer. It works very well especially if you have low hand strength.

    A friend of mine told me to put breadcrumbs on the bottom to prevent the spanakopita from gettin soggy, however I never tried it because I didnt wanted to mess it up. but now I believe it haha. Thank you so much youre the best.

    I love that you use your hands to mix, that you taste before you add the eggs, and that you taste the final product. Each time I watch, I get hungry for whatever you are making. Anything with feta is terrific in my kitchen, too.

      Anything with feta does not need salt added since feta cheese is loaded with salt.

    Made this today and it was delish. The filling initially looked too wet, even after sweating it for 1/2 hour, but a handful of panko did the trick as you suggested. Bottom and top crisp, filling tasty. Loved the fresh mint. Thanks!

    I made both a fresh batch and a smaller frozen batch for later. Great both times! And really tasty. The frozen batch was defrosted in the refrigerator but then I had to delay cooking it for an additional 24 hours due to a change in plans. By the second day it was quite wet at the start and I was worried. But I just drained it and cooked it as instructed, and it still came out great with a crispy top ( bottom was destroyed but the slice held together, still really good)! That is a resilient recipe, thanks!

      Make it today and it was great. I didn’t use up the butter and I only bake it for 45 minutes and let it rest for 25. I wish I can post my pie to show you want it looks like for me. I did squeeze a lot of water out of the zucchini with my tea towel even though I waited half an hour. I was glad I did because it came out great.

    Hi Dimitr....made this for dinner tonight and we almost liked the bottom of the pan. Not too fond of dill so I left it out but doubled the parsley.     Can also squeeze liquid out with the potato ricer- just the liquid goes thru the holes. Could mix together with Danish wire whisk, too- easier. Really

    Yia Sou, Koukla! Can you double/triple the recipe for the filling? Would it freeze better if you omitted the eggs?

    Disambiguation: kolokythopita may also mean "pumpkin pie" which is sweet! You see, in compound words "o" is usually used as connecting vowel, so kolokythi + pita = kolokythopita and kolokytha + pita = kolokythopita!

      Hi! I bought a case of phyllo from the restaurant supply store since I know that I'll be baking with it a lot in the coming weeks :)

      Most grocery stores have it in the freezer section. Walmart even carries it.
