Bless your heart, I have a grater, with the crank handle,i resisted too,long, Findlay researched, bout one, best thing since sliced bread for me, I love grated cheddar and use a lot.
With the sour cream, it can be hard to freeze this, but doable. I would simply defrost in the fridge, add a splash of water and reheat in the microwave in the individual servings. Heating in the Instant Pot would turn this to mush.
Quick update! I wanted to share that I just had a reader email me to say they tried my stovetop recipe for Taco Pasta with cassava elbow noodles and it worked perfectly with the same timing. How do you think it would thaw if I wanted to make freezer meals with this? Mush? Maybe cook two minutes ?

If I wanted to use cassava elbow noodles instead of regular noodles how long would you suggest pressure cooking them for?
Unfortunately, cassava noodles would give off too much starch. They need to be cooked separately.
