The use of fish cakes is the Muslim version of this dish. Being a dish brought to the region by Chinese immigrants, it is traditionally made using a very thinly sliced dried smoked, sweet pork sausage instead.

This type of noodles don't break easily unless the quality you get is not that good, or it's cold from the fridge. If it is cold, let it come to room temperature and loosen it before frying. You'll also need enough oil and don't fry it like "fried rice", more gently. Hope these help. Thanks,

Light Soy Sauce (Amoy Brand (First Extract & Angel Brand (fr Malaysia)
Dark Soy Sauce ( Angel Brand & Cheong Chan Brand (both fr Malaysia)

Gimio Chin Too bad, fresh cockles are not available here. I tried frozen cockles once and it was horrible. Btw, the wok fr here, in Vancouver.

it is obvious that you should start with a non-stick wok. try cooking this dish several times, I am sure you will improve. good try though
I don't use non-stick wok though..only a non-stick pan for frying eggs. Thanks for the suggestion.
