Igado || Ilocano dish || How to Cook Igado

Igado or Pork and liver stew is popular in Northern Part of the Philippines Especially in Ilocos region
today OId Lady/Lola Belen will teach us her Version of Igado.. in this video we use the following ingredients
good for
20 to 30 servings
1 kilo of pork intestine
1 kilo of pork liver
1 kilo of pork
1 cup of water
1/4 to 1/2 cup of vegetable oil
1 cup of soysauce (datu puti brand)
1/2 cup vinegar (datu puti brand)
2 can of pineapple juice (2 cups)
1 cup of tomato sauce
bay leaves 8 to 10 pcs
black pepper for seasoning
we dont use salt butt you can add
2 small cans of chickpease
1 cup of raisins
1/2 cup sugar
vegetables such as
250 grams carrots
250 grams potatoes
2 to 4 pcs of red and green bell peppers
2 medium onions
6 garlic cloves
10-15 pcs of Calamansi for marinade
slurry is equal part of water and cornstarch for thickening the sauce
you can devide the ingredients if you will cook small amount
