    I recommend cooking the tomatoes a bit more like 10-15 minutes before adding the chicken.
    Gets rid of that raw tomato taste.

      You don't use all the curry in one serving, curry reheats amazingly. It's 2.75 a serving, not for the whole thing, you'll get probably 3-4 servings from that amount

    garam masala is a roasted spice. You don't need to saute it. Try adding it just after you add the coconut milk. The curry will taste better and have a beautiful aroma.
    Edit- I am from west bengal, India. The garam masala we get here is already toasted. If we try to saute it in oil with other spices, by the time the other spices get cooked, the garam masala will be burnt.

      Yes, it is dry roasted... But sautéing the garam masala in oil, transfers all the flavour from the masala to the öil and then the curry... So it does taste better...

    Take it from Indian, first fry garlic for a min, then add onion until light brown, and then only after the onion is cooked do u add the tomatoes, then let it cook until there is a golden shimmer on the surface, then add spices after raw tomatoes taste is gone, then water and chicken. And then enjoy. In spices, add garam masala, red chilli powder 1 tsp, turmeric powder1/2 tsp. Add peas after spices. For richness, use fresh cream, not coconut milk.

    Protip: If you life an earthier, more flavorful kick reserve some of the garam masala to add towards the end of cooking. Since the spices in garam masala are roasted before being powdered, you don't have to be worried about then tasting raw in your dish.

      as an indian no not rly curry usually is much thicker and has more of a milky color like you would def add heavy whipping cream or some type of milk and traditionally we wouldn’t put peas in it

      As an Indian I'm still confused by what a curry is . It's different everywhere I guess. In my state curry means a dish that's eaten along with rice or chapati that's watery liquid , gravy not dry . We thought it's an English word . We usually have names for all these dishes . Chicken curry , egg curry, fish curry, pea curry..we just have another common word used for it.

    You need to add raw garam masala after the onions are fried else it leaves a weird raw masala taste

    Another tip. Try to make the tomato puree from the scratch. Its not gonna cost much and might take additional 5 minutes to make it. But it tastes much better.

    Vegan version: use tofu instead of chicken
    Veg version: paneer/cottage cheese instead of chicken
    You can rub the spice or just prepare the gravy like he did.

    The peas were a bit weird but it makes sense. You're making it for students. Green Peas are healthy.
    PS: Cook down the tomatoes little more for better taste. (To remove the raw tomato taste)

      Tomatoes are added to reduce the power of spice. It help to make the curry more thick and reduce the hotness from spice.
      As an indian, sometimes i use that trick when i want to thicken the curry or when i add extra accidentally salt or pepper.

    Outside india no one knows to work their spieces 😔. You need to fry all spieces in oil unless they leave their oil. Then add water just a lil bit.     These meals gonna get me through life right now, lmao. Already can't afford to move out so I'm still stuck at home, now me &the bro are the only ones working 'cause mom's disabled, dad's newly diagnosed MS & barely using a walker, grandma's 85... they took our food stamps away because my dad finally got his social security check that will *just barely* cover his bills. So, okay, we won't get evicted or the power turned off (for now) but, uh, I have my own bills to pay & so does the bro, we don't have the money to cover all the food our household goes through, currently, in a month.
