I do this a lot, but I have never used butter and ranch in it. I throw in some bay leaves. Those peppers and brine always sends it to the next level. Next time, I will try the ranch and butter ! How me miss those New England fall colors! They will come!! The ranch and butter definitely adds a depth and richness to the roast that is pretty yummy. Bay leaves sound great, too!! Hope you are well, too, and enjoying the fall weather!!!

Hi there!! As the pepperchino peppers slow cook, they do lose most of their spiciness, and they are easy to remove once the roast is finished. Leave them on the side if you want a little spice (on the side). They really just impart a depth of flavor and not any heat. My sister can't stand anything that has any spice to it, and this is one of her favorite slow-cooker meals to make! We think you'll love it! (and your hubby!)...be sure to serve with mashed potatoes...the gravy is amazing!!!

Hi Damon, usually a 4 lb roast, but a 3 lb or 5 lb roast will work, too. Any of those sizes will produce extremely tender fall-apart results. Hope you enjoy it!

This is how I make Italian beef except chop up the chuck roast into 1 to 2 inch pieces before hand. Put on hoagies and add provolone cheese
