In France, we eat beef tripe. It is not as popular now as when I was a kid. It used to be cheap, but now it is quite expensive for what it is. It usually cooked in white wine with carrots and tomatoes. I love it.

You guys are more adventurous than me. I came to US in 1988 when I was 9 and till this day I have yet to be brave enough to try “ho vit lon”.

Tripe has to be cooked for hours to make it soft. Maybe the vendor did not cook it long enough; it should not be chewy.
