I'm thinking I might steam the tougher ones as separate entities on a plate in the microwave, and then pack them in, because she's definitely a fan everything in your recipe. Especially bell pepper, carrot, etc. would need a pre-cook. But I love this concept (& exactly your way when just for me). I assume boiling actual stock would be good, too.

yes one of the best parts about this recipe is that it's very customizable so you can replace with your favorite veggies :)
