I love this and think you will too. I am using a sweet easy-peel green banana. You can use a green banana or plantain if you wanted to. Chickpeas, coconut milk, and super herbs and spices get the rice on.

I will cook this again today, it was so delicious last time, I will use plantain this time though because it was a bit of a struggle to keep the bananas intact, cant wait!

I used coconut oil to fry my bananas, but they ended up not frying right and getting all mushy.
