    Today marks one of the last days we'll make food directly out of the garden. We've had a few good frosts already, and it's only a matter of time until the hard frost comes. I picked some tomatoes, cabbage, tomatoes and leeks and made absolutely delicious recipes. We made several trays of cabbage rolls and a huge pot of leek and potato soup. I hope you enjoy coming along with me!

    After mom passed and many years of trying to replicate my mum's mince dishes ( bolognaise, casseroles, stuffed anything) and always feeling somethings missing I came across her hand written notes in a recipe book and saw that she always put grated carrot in her mince meat and tomato paste. She wrote : stretches mince to double its portion size and kids doesnt know its there. Tomato paste and spices disguises carrots and looks just like mince when cooked. ( she would listen to a recipe on the radio sitting behind her sewing machine and take notes. Bless her frugal heart having to always feed a hungry family of 7. And voila now I do the same with my family of 6 and they are none the wiser and love my mince dishes😂

      It’s wonderful how food can evoke such fond memories. Food cements memories in more ways than just taste. It heightens ones sense of smell, of taste, of sight and of course mouthfeel.

      I mince carrot, onion and celery and caramelize.... and add to beef. None the wiser! But all healthier!

    With the leftover cabbage I shredded it then layer it . That way is easier to serve. With the meat mixture. Also I and about a half cup of vinegar to my sauce.

    Once a year my girlfriends and I get together & make Cabbage rolls for our families, we end up making a couple hundred or so and freeze. We realized that after we had a lot of perfectly good left overs that didn't make the cut, so we made a large pot and pressure canned some cabbage roll soup, it was such a great way to use up every bit and also SOOO Yummy on a fall or winters day.

    I appreciate you considering the cost of your recipes. Nothing wrong with a splurge now and then either. So funny when you were standing at your workspace counter where that ladder is, your cat walked purposefully up the ladder giving no thought to you whatsoever. It struck me as so funny, I laughed right out loud.😅😅😅😅 Really enjoyed this video.

    I’ve put the whole cabbage in the freezer overnight and the leaves soften and come apart the same as if they were boiled - a hint a friend shared with me a few years ago. Everything looks delicious.

    I just made cabbage rolls ystdy. I use raw beef onion and rice. Never put eggs in ….that’s interesting. I always freeze my cabbages whole and take them out when I take meat out to thaw. Leaves are very easy to roll and less mess. You had the cabbage leave backwards. Easier to roll one way than the other. I make smaller ones and freeze in freezer bags so I can just pull out rolls anytime I want them. Interesting to see how others do it.

    I grew up with venison (deer) ground meat made in these. My grandparents as farmers in North Dakota made this using what they had on the farm, mostly beef and or deer meat. You have inspired me to make this and share with friends near us. For two people it is difficult to make such big meals now. I miss those days of huge family gatherings.

    Hi, love seeing you make what my grandmother, mother, I (now 68), and my children have made many times. Coming from a German family, my mother with14 sibling's during in the 1920's. It's called (pronounced as) Ha-lup-sy. Here are some small differences. We steam cook the whole cabbage, let it cool to peal whole leaves to roll up (much easier, no brake-ups), we never added eggs, and, in a tall pot that can go in the oven - place bacon strips on the bottom (so not to burn the one's on the bottom), stack the rolled-up cabbage rap's on top of the bacon, when full, pour canned tomatoes and liquid on top, braking open flat on top the whole tomatoes (about equivalent to one extra-large can of), now bake 350 till done (heated through) about 1 plus hour. This dish is one of several Always served at our family gatherings and holidays. FYI, I also made comments about my Husbands mothers Potatoe leek soup recipe and how to make it creamy on that episode. Love your energy, style, and your personality.     My mother in law would add raw rice to the meat mixture. It cooked up nicely during the baking process. So delicious ❤

      Back in the day minute rice was the thing and when added to any dish it cooked up and didn't require any extra liquid.

      Much easier way to
      fix the meat stuffing, but the meat stuffing tends to be much more firm. If you do not mind all is well. When my kids were young and when I was working fast and easy was all I had time for. Now I have lots of time on my hands and cooked rice does give the best meat stuffing. Good luck and happy cooking!

    I don't ever remember my gramma precooked her rice for cabbage rools. She just mixed uncooked rice into her meat mixture and when the cabbage rolls cooked it also cooked the rice in the mixture.

      I agree. I never pre-cook mine either.( rice). Also, never put that much rice in mine. Mabe 1 or 2 eggs per 1& 1/2# ground meat. I don't know about this recipe. Also I mix a little ground pork in.

      One of the best thing about recipes is everybody makes stuff a bit different. My Mom cooked rice before adding it to stuffed peppers, stuffed tomatoes and meatloaf. I didnt know you could use it raw. Learning new things is one of my favorite parts of this channel.

    My hungarian aunt came to this country as a little girl and always cooked for the family as they worked. When Frying the onions, she always added paprika to them. And she never added eggs to the meat bec she said it made the meat hard. And she was right. Her stuffed cabbage was the best ever!

    I was reading the comments. I felt very Envious. And you all had grandmothers and mothers who cooked. When I was little my mother cooked. Then she became blind. She never cooked again. And all grandmothers were gone. So my experience and learning has been watching other people. So I bless all the grandmothers and mothers out there Who taught their daughters to cook. 😊

    Freeze your cabbage first, then thaw, and you don’t have to boil the cabbage, it will be really soft and pliable

    Hi Chelsea, greetings from Romania❤. We also have cabage roles in my country, here are called SARMALE and it is a Romanian famous meal especially for Christmas and Easter when everyone has to have it on the table, however this dish originates in Turkey. We do not put any eggs or garlic in the filling, but a couple of dried hurbs like parsley and thyme together with onion,rise, and we mix pork with beaf. And we boli it in tomatoe souce with water. It is delicious. Great to see such positive and hard working people. All the best and hugs🤗🤗🤗

    Cabbage rolls are so amazing! I’m from south Louisiana and we love them.. I normally trim the spines of the cabbage but I think I will leave them since yours rolled easily. More to eat! I do add heavy cream to my sauce to cut the acidity. My husband suffers from red sauce heartburn 😉

    Good job! Looks good. I always freeze my cabbage heads. I find that putting the whole head of cabbage in the freezer makes for easier rolling and less tearing once thawed. I also cut the rib off the larger leaves to make for easier rolling. I always bake them in a big roasting pan in multiple layers with a tomato sauce sour cream mixture poured over them. Once cooled, I then lay out individually and freeze. Once frozen I bag in large bags - lets me take out how many I want at a time. I like the rice a little sticky because it helps bind - I do not add eggs to mine. Anyway, just thought I'd share what I do. Yours looked yummy! Makes me want cabbage rolls now. Soup looked good too. I see you picked off your tomatoes - I did mine this past Sunday and Monday - 577 pounds worth...lol. I'll maybe share some pictures in the community and relay my funny pepper story.....

    You make too much work for yourself. I stopped making cabbage rolls 30 years ago and have since made stuffed cabbage soup. All the same ingredients except the cabbage is chopped up, hamburger, eggs and rice browned together, and everything thrown together to cook in a slow cooker or oven.

    I’ve noticed you make food assembly difficult for yourself…I probably do the same thing 🤪 place the pot you’re reaching into with your spoon so you don’t have to reach across your body-just scoop and plop….also place the cabbage leaves with the rib side down so it forms a small cup to receive the filling.

    I saw a recipe once for a layered cabbage dish. We called it cabbage UNrolled. Its all the same ingredients but made like a lasagna. And, i didn't watch the whole video before committing 😂

    Hi!
    I noticed on some of the tomato’s, on the bottom of there was a damage that I thought was bight. Was told it was disease, that you have to destroy the plant. Do you think that is what it is?

    We lived in Canada 15 years and my older kids and us, love cabbage rolls. I make a ton and freeze them. I always brown my cabbage rolls on both sides and cook them with the tomato sauce in my big electric frying pan. I add a little brown sugar and vinegar, salt and pepper. I see you did as well. Yum! I don’t use eggs but always add some poultry seasoning to the meat. I make sure the rice is cool before adding to the meat. I always make perogies to go with!

    And Ukrainian ladies don't use the centre rib. They cut that out and make smaller rolls.

    We make our cabbage rolls with sour cabbage. Found in vegetable section of grocery stores and it comes as the whole head of cabbage. It really is sauerkraut not shredded! To make rolls cut the center vein so it is flatter and the leaf will roll easier. With the sour leaves you can use 2\3 rice 1\3 meat and use the eggs to increase protein. All you need are some perogies to round out the borscht and cabbage rolls. What delicious meals you made.

    I don't know if anyone has told you this but, you have such a soothing voice. You have that "Bob Ross" lilt and I find it so relaxing. I also love that you use a microphone. It's so easy to hear you well. Also, just curious why you soaked the leeks overnight.

    I love cabbae rolls, but I am lazy so I make a casserole like you mentioned. I will even freeze the casserole. Have you tried cabbage roll soup? It is so awesome. You brown the meat add onions and then use tomatoes (canned is good) or tomato juice and beef broth. Add as much cabbage as you like. Add what ever seasoning you use on your cabbage roll. I like to use caraway seeds to mine. I add the rice just at the end. I can it for the winter but don't add the rice until I heat the soup,

    I make a huge amount of cabbage rolls every Christmas. We love them but it is time consuming. I got all the way done and realized that I had forgotten to season the meat 😂 I also don't cook the meat

    Loved your video! Could you try this on your cabbage rolls? Before baking, I use V8 juice along with kraut on top of the cabbage rolls. My twin sister does not eat kraut and likes it on cabbage rolls. Try it, your family might like it. Using kraut is a West Virginia Appalachian thing. Enjoy!

    My Mom made cabbage rolls often. When she had all the bits left she made a "lazy-man cabbage roll" AKA your casserole. It was a huge treat and I made them for my kids. Have a wonderful weekend and thank you for sharing!

    My family loves cabbage rolls also. When I don't have time to make them, I simply throw together a casserole using all of the exact ingredients & rough chop the cabbage fry in a little olive oil until crisp tender & mix everything together & heat til hot. I have to make it in a huge 11x17 dish (I think that's what it is) & there are usually no leftovers. I normally use 11/2lb. ground beef & 1/2 - 1lb. ground pork. And as soon as I get it typed out, you mention it in your video. 😆 Have you fixed fried cabbage with beef sausage or kielbasa? Another of my family favorites.

    You might try the Polish recipe for cabbage rolls from the YT channel Polish Your Kitchen. I made lots of them last spring from my cabbage and they were very different and wonderful. Primary seasoning in the tomato sauce was allspice berries and peppercorns...unexpected and delicious!

    I love cabbage rolls, but when I don't have a lot of time I make lazy cabbage rolls! It's similar to your scrap casserole but even easier because you don't even need to bake it! It's a total one pot meal. We also love to add dill to ours and top with some sour cream

    My Polish mom made cabbage rolls with 1/2 ground beef 1/2 ground pork. She would fry up lots of diced onions in bacon fat, then mixed the cooked rice with browned onions and bacon fat. Add to raw beef/pork mix , salt and pepper and mix We would mix ketchup tomato soup thinned with the cabbage water. put rolls in a pot, cover with the tomato ketchup mix and bake. They are extremely good. Try the bacon fat it adds a layer of flavour. Love your channel

    Hello, I’m watching you as we speak. I make a Russian cabbage soup that has vinegar and a bit of sugar. It’s a wonderful taste. Anyway I bet adding some vinegar and sugar would really step up the flavor of your cabbage rolls!❤

    Hi Chelsea, you forgot to mention how the cabbage rolls turned out, and if your family enjoyed them. I would love to know. Coming from a Jewish family, my grandmother was Austrian and she added a bit of ginger powder, I believe, just a touch, to the sauce. I just remember a slight ginger accent…I haven’t seen that in any recipes on line though. Interesting…

    Thank you for the videos. When you make your cabbage rolls next, you might think about reducing the amount of water (or broth, for more flavor) in which you cook your rice, so it won't get soggy in the final cooking. Two cups water to one cup rice is high. Also, I LOVE cabbage rolls, and usually add in chopped cabbage to the filling, as one measly leaf rolled around the filling is just not enough. I also use two or more cabbage leaves per roll just to get that great flavor.

    Never seen cabbags rolls done that way....season the raw meat, eggs and add, like you would a meatloaf, and add the raw rice to the meat (so it doesn't get mushy), then roll a small hand full of meat/rice mixture into whole boiled/steamed limp cabbage leaves, add some tomato sauce onto bottom of baking dish, then add cabbage rolls to baking dish, then pour tomato sauce over top, cover and bake for about 45 minutes. Since you mention creme sauce, shown below is method for Cabbage Rolls in creme sauce (that's how Germans prepare them). Prepare meat the same method as well as cabbage. Once rolled, secure each roll together with twine (non-acrylic such as butchers twine), then roll in all purpose flour and place each roll into a large oiled/buttered frying pan, fry all rolls each side until nicely golden brown, then transfer to casserole. Saute additional chopped leaves until golden brown and add to casserole, pour 1/2 way up of roll diameter with vegetable or chicken broth, and another 1/2with creme. Bake in oven uncovered for 45 minutes or until inside meat temp is 160F minimum. Remove twine on each cabbage roll before serving. Use only whole leaves to makes rolls. If you soak the whole head in near boiling water (with the core cut out) you can remove each leaf easily with a blunt wooden spatula, and set aside + stack them into eachother again, cool and then roll. This way you can almost use the entire head and use whatever is leftover to fry as mentioned above, and your rolls won't fall apart. Season the sauce with salt and pepper. If you need to thicken sauce, use some corn starch diluted with a little water, too thick add more broth and/or creme. Delicious. Side note: Never had cabbage rolls in tomato sauce until I came to America. Minneapolis has a good size Polish community and they cook them with tomato sauce, and they're tasty too, but I prefer the creme version, goes better with cabbage in my opinion.

    I don't cook my meat fist. I cook my rice, mix with the raw meat, season and roll up in the cabbage. I por my sauce over them and cook in the instapkt for 45 minutes. My daughter and I usually have 4 installed pots going at once.

    When I make my stuffed peppers, I don’t cook my meat . I mix all my ingredients together and then wrap the cabbage leaves around the meat, cover with tomatoes and cook.

    I've never precooked my meat or rice to make cabbage rolls. Just mixed the meat, raw rice and seasonings in a bowl. Roll in cabbage leaves and cook without tomato sauce(makes for softer cabbage as the acid in the tomatoes prevents vegg from cooking as well). Then add sauce for about the last 1/2 hour of baking. Freezing the whole cabbage ahead makes a really easy timesaver also. I learned this way from my Romanian Grandmother.

    Just an idea. My family used RAW burger, cooked rice, eggs, raw chopped onion (or onion powder and the same seasonings you used. They held together like a meatball to wrap them in the cabbage leaves. Less cooking. And lots of sauce or tomato juice cooks the meat.

    My mom often grated the cabbage or used slaw mix and layered the cabbage, meat mixture sauce and repeat calling it busy day cabbage roll dish. traditionally when she made the rolls they were lightly browned in hot bacon grease before panning up, covered in sauce and baked. Last 10 min cream was poured over and returned to the oven. Was the Russian tradition on my maternal grandfather's side. Yummy, hungry for them now

    I made your cabbage roll recipe for the first time in my life two days ago and we loved them. 💜 My husband loves spicy food so I made a spicy tomato sauce and I had enough meat mixture left to make a couple of casserole freezer meals.     I love cabbage rolls and yours look delicious. There are two things I don't like about cabbage rolls: the chore of making enough for dinner and some for freezing and the tomato sauce. I do not like any type of red rice and the sauce turns the rice red. I grew up with 6 brothers and the amount we had to to make matches yours. I now make "unstuffed cabbage: filling is the same and I make that in one pan, cook the rice in another and use my largest fry pan to cook a head of chopped cabbage. Mix it all together and yum without all the work. Freezes well, also.

    Can you put the recipe in show notes? Looks yummy. On the immersion blender, I was wondering if your scratches your pan. I have one that has a hard plastic bottom and the blade doesn’t hit, but it looks like it scratches my stainless pan.

    I’ve also seen where you can finish off the extra cabbage/filling by chopping up the extra leaves and tossing everything in your broth of choice for cabbage roll soup! Obviously you have to keep an eye and only cook long enough to meld the flavors, but sometimes jars of soup are easier to freeze than casserole dishes 💚

    My Ukrainian relatives don't use eggs and add uncooked rice to the meat. I too make "lazy cabbage rolls"...all mixed together as a casserole.

    Guuuurrrrllll... momma always made cabbage rolls with green peppers and onions in the meat mixture and at least onions in the tomato sauce. Otherwise they were too bland. My favorite part of cabbage rolls, is the crispy edges of the tomato sauced cabbage. You *almost* have me talked into making them but I know what a job it is, lol. Hope you enjoy yours!

    I make a cabbage lasagna but I don't add put cheese on top it is delicious. My mom would make cabbage rolls and I loved hers she would also make stuffed peppers and I wasn't A fan of those .

    I can’t see spending the time to roll all the cabbage rolls it takes a very long time so what I do instead I call it lazy woman’s cabbage roll casserole and all I do is add everything together and mix it up and I cut the cabbage into bite size pieces and I use cauliflower rice instead of actual rice to have a lower carbohydrate count and I mix a can of diced tomatoes in to the casserole. So I find that much easier then making endless amounts of rolls. Anyway just another suggestion. 🥰❤️🙏🏻🇨🇦

    Such a beautiful garden , so jealous ….. I recommend hanging small bunches of straw flowers after removing the foliage…bind close to the end of the stem and hang to dry out ….it helps them have nice straight stems and their heads face upwards…I used to hang them over a curtain rod in a sunny room ……… love all your videos. It’s so good to see good old fashioned cooking that tastes great and fills a belly 😊

    We do the cabbage rolls but we make it in a casserole. Basicly all the same but chopped up. Makes for less work. Still as good...
