Hi Chelsea, UK here. By coincidence I used to live in Chelsea in London! One of my fav jams is Zuccini and orange. It is lovely. You can use lemon instead of orange and also add fresh ginger too. There will be receipes for this on the web. it might come under the title of courgette. It can be used as a sweet jam for cakes, bread etc but it also pairs brilliantly with cold meats, cheese etc. Love watching you amidst all the chaos many of us are experiencing these days. I grew up in the farming region of Devon here so your vids take me back to my childhood. Thank you for the many hours of enjoyment you bring to us.
You have an amazing garden. I use the fresh or frozen green beans as a side with almost any meat. I chop carrots and other veggies into sticks the same size as the beans . I drizzle it all with oil, salt, pepper onion powder and garlic powder. Fo in with you hands or a tool, and get them all coated. Roast in a fan oven until they are crisp and golden, almost black. SO good, and it gets almost a nutty flavour. ❤

I've felt that way about pickles before. My mom used to go to the local Amish produce auction and would come home with...."gifts". If you place shade cloth over your turnips and beets the reduction in sunlight will slow down their growth. :) And, I’ve never met a green bean - canned, frozen or fresh - that I didn’t like. My mother was a fan so we were served them all.
Green bean recipe for either fresh or canned... 1/2 stick of butter in a skillet.. Melt and allow to slightly brown. Add one small onion, saute until clear. Toss in about 2 cups mushrooms.. Saute. Drain canned green beans reserving liquid. Add beans to skillet with small amount of liquid. Cook low and slow until dry. If using fresh beans add about1/2 cup water per quarter of beans. Cover and cook low and slow until dry. Add a little water if needed to get them tender. of course add salt, pepper and any other seasoning desired. We love them cooked like this.
I have been watching "modern homesteading alaska" and Jessica baked her beets rubbed with avocado oil.. peeled them. Sliced them. Lightly salted/seasoned them Then freezedried them and turned into beets chips.. like potato chips.. she claims they are amazing.. then she made a ton of freezedried cubes I believe with the intention of powdering it to add to baked goods for color and/or smoothie
We call green beans cooked with onions and bacon, " grandma's" green beans. She would cook them until they were what many would say over cooked. Very soft, but the flavor is wonderful! You may find adding those flavors to the canned beans will be a hit with your family. I love fresh green beans cooked tender crisp, but sometimes we just have to have grandma's beans...yum!
I was raised a Country Girl, but never raised a garden myself until after my husband and I retired moved back to the old home place in Kentucky (loved it) I worked hard trying to grow veggies but.. through many many years of corn raised the land was in need of alot of Chester's knowledge I knew nothing of what was wrong or what to do. I suggest you try roasting fresh green beans, Season with salt and pepper, or add garlic powder or onion powder, some oil, toss together , and roast on a cookie sheet at about 400F for 20 minutes or so. Yummy!
When I was a young girl my dad delivered milk to the schools for lunch. He gotto know the lunch ladies who worked at the schools in those days. They were real good cooks and made delicious school l like lunches in Those days/ They made wonderful homemade chocolate cake. My dad found out from the ladies that they put beet juice in their chocolate cake . Wow……my mom started doing that in the summertime when the beets were growing. Now-a-days kids would have a fit if they knew it!
My mom made what she called a Beet Cake when I was a child in the 60s. It was a dark, moist chocolate cake that was delicious and you could not tell there were grated beets in it. I have her recipe, but I have never made it. I should do that soon!
I’m from the south and I like green beans cooked for a long time with fatback or ham hocks. I don’t like crunchy half cooked green beans. My granny used to say she would cook the life out of them.

I love taking a can of green beans, draining them and frying them in butter with flour on them. Fry them crispy. My sister and I can eat a qt of them. So good

Hey Chelsea, another idea to serve fresh beet tops my family of 8 love....chop bacon into bite size, saute til brown not crisp, add diced onion and continue to saute till onion is translucent. Add chopped beet tops and saute until tender. Serve warm.
My family and I didn't like frozen green beens until someone showed me how to cook them differently. Now that I boil them longer with extra salt, we all like them. I find it also helps to blanch them in salted water before freezing. To me, it's a texture issue. Frozen beans always seemed watery to me.

What are harvard beets? I think I've heard that term used before but have no clue how they taste. BUT you harvested a great harvest of learning with your peppers! Knowing and following up with action is different from knowing - learning the hard way is often the best way! LOL At least it is for me. My dreams and imaginations are WAY bigger than my abilities in action. Your high tunnel banners are still so beautiful! I love them as they make it more like a home and the bouquets of sunflowers in the beds are fantastic. What a really pleasant time spent in your tunnel.You are a wonderful source of encouragement to me, personally. I'm always inspired to work harder, appreciate the produce, and enjoy my time more.
Chelsea mum used to get the big zucchini she scrap the centre out and make a mince like a meat loaf and she stuff the zucchini and then bake them it’s yummy

Hi Chelsea, We grow Carminat pole string beans they are purple and they turn green when they get cooked ! They are absolutely fantastic always tender even when enourmous, without strings great tasting! We like both canned (blanched then 20 g salt per litre of water then waterbathed 90 minutes) AND frozen!
You did show that beautifully dark sunflower but show it again lol. I love it! I buy most of my seeds from MiGardener. I am in MIchigan so he sells seeds from other gardeners in Michigan which is great, They are awesome
Chelsea I grow up with canned green beans. Love them!! Here in the south we would also cook green beans with baby potatoes, bacon and onions. Oh yum!! We would cook our bacon to almost done add the onions finish cooking, set aside. Start the green bean and potatoes then add the bacon and onion slow cook until done along then add salt and pepper to taste. SO GOOD!! 😫 frozen green beans 😫 blah My jalapeño peppers did really will this year. My largest crop yet. A large crop of Roma tomatoes but my slicing tomatoes aren’t doing very good. Love your videos! I learn a lot and appreciate your honesty in the how's and why's of getting a good harvest. I too, forgot about the different watering needs for peppers and as such, I haven't gotten many fruits on the pepper plants- so it helped so much! Thank you!
Hi again Chelsea, I forgot to add that another jam I make, in particular when carrots are in abundance, is carrot jam. It does sound strange for some people but is great. I love carrots but dont like them frozen and nor really keen on canned ones. Carrot and orange is the normal combination. So cheap, easy and quick to make. Again can be used as a normal jam but also brilliant when paired with cold meats and cheeses etc. If you do have some carrot harvest excess it would be worth a try. Again many receipes on the net for it. I also forgot to say that Zucchini jam can be made to be canned to give a longer shelf life or without canning but normally lasts only a month in the fridge.
Chelsea, your garden is spectacular! I love to hear the crunch of the cabbage leaves as you step on them to harvest the cabbage! My favorite thing is harvesting potatoes. I love how the earth smells! Your sunflowers and all the flowers in the high tunnel and garden are glorious this year! I've been growing " mammoth " sunflowers for a few years, seeds from Andrew Jackson's Monticello. I save the heads, take the seeds and gift packets for in my Christmas cards.
I loved my grandmother canned green beans but they were over cooked but had ham in them. I love fresh green beans with butter and tar. I love the sunflower!
I’m going to do cucumber chips seasoned in my freeze dryer for snacks. I have enough pickles. I always use bacon and onion in my green beans after I open a jar.

I did not know that about peppers. I am going to go back to in ground gardening in my high tunnel next year for tomatoes, cucumbers, and peppers, and I also water with drip irrigation! So that is going to be a big help to me.
Chelsea, it’s so funny- I hate frozen green beans and love canned! And yes, when I was growing up , we only had canned veggies! I can remember in the summer when my Mom could afford to buy fresh green beans it was such a treat! How things have changed! Now, the only canned veggie I eat is string beans! 😊

We wrap canned green beans in a strip of bacon and fry them in a pan or on the BBQ grill. Usually 8-10 green beans wrapped in a single strip of bacon.

When you cook your canned green beans or fresh ones. Add bacon, butter and liquid smoke and cook. Best beans ever!!

I like to freeze the green beans and fry/saute them with onion and carrots. Canned green beans with bacon, onion and butter is soooo good.
I like to grate and freeze dry abundant cucumbers and make taziki sauce with yogurt. Yum! Homegrown lamb fresh pita bread and all the herbs.

30:06 all of my plants are on drip tape and get the same amount of water. My peppers are producing like crazy this year!

I like making an ABC salad with my beets. Shredded apples, carrots, and beets.
Hi again Chelsea, I forgot to add that another jam I make, in particular when carrots are in abundance, is carrot jam. It does sound strange for some people but is great. I love carrots but dont like them frozen and nor really keen on canned ones. Carrot and orange is the normal combination. So cheap, easy and quick to make. Again can be used as a normal jam but also brilliant when paired with cold meats and cheeses etc.
If you do have some carrot harvest excess it would be worth a try. Again many receipes on the net for it. I also forgot to say that Zucchini jam can be made to be canned to give a longer shelf life or without canning but normally lasts only a month in the fridge.
I love both canned and frozen green beans, I love them. We love borcht too but specificially the creamy doukhobor borscht style :D

Chelsea, your garden is spectacular! I love to hear the crunch of the cabbage leaves as you step on them to harvest the cabbage! My favorite thing is harvesting potatoes. I love how the earth smells! Your sunflowers and all the flowers in the high tunnel and garden are glorious this year! I've been growing " mammoth " sunflowers for a few years, seeds from Andrew Jackson's Monticello. I save the heads, take the seeds and gift packets for in my Christmas cards.
I loved my grandmother canned green beans but they were over cooked but had ham in them. I love fresh green beans with butter and tar. I love the sunflower!

I'm a canned green bean lover and dislike frozen green beans. 😊 I love the softer texture and they seem to hold flavor better.

My Mum would never buy celery (or parsnips) until after there had been a frost on them. Apparently they tasted better.
I’m going to do cucumber chips seasoned in my freeze dryer for snacks. I have enough pickles. I always use bacon and onion in my green beans after I open a jar.

I have seen that if you blanch the beans and salt them then freeze dry them ,they are like the veggie straws.

I did not know that about peppers. I am going to go back to in ground gardening in my high tunnel next year for tomatoes, cucumbers, and peppers, and I also water with drip irrigation! So that is going to be a big help to me.

I always add a stalk of chopped rhubarb in my Borscht. My Ukrainian grandmother taught me that. It makes it slightly sour. Delicious.
Chelsea, it’s so funny- I hate frozen green beans and love canned! And yes, when I was growing up , we only had canned veggies! I can remember in the summer when my Mom could afford to buy fresh green beans it was such a treat! How things have changed! Now, the only canned veggie I eat is string beans! 😊
With giant zucchinis I make them into ginger jam. Always a hit with friends at Xmas.
