    We had a hard frost, and I forgot to close my high tunnel door the day before. The risk of losing all my tomatoes was really high, but thankfully, they were spared, and we were able to harvest them all. We also harvested our Dills Atlantic Giant pumpkins; one came in at 88lbs! Once we came inside, I made Piccalilli relish with some green tomatoes. I hope you enjoy coming along with me.

Just like a BLT except substitute the red tomato with fried green tomatoes cooked in the bacon grease!!!! You have to try it! You won’t be disappointed!!! You can also can green tomatoes for the winter

    One year my 69yr. old husband & I at age 63 decided to plant a few seeds of a giant pumpkin variety. Well…they did really well & we wound up with 3 REALLY ginormous pumpkins. That was the year when we learned to never, EVER grow anything at that age that you are incapable of picking up!😂😅. It was hilarious… here’s these 2 old folks with 3 gorgeous pumpkins that were holding us hostage as we were totally unable to move them anywhere 🎃🎃🎃. We had to find 3 big strapping teenage boys to get them out of the garden…had them put one on our front lawn & gave the other 2 away. Whew! A gardening experience to remember …

    When I was growing up we had a big garden. One year an early unexpected frost came in and killed the tomato plants. So my Mom looked up a recipe to use them. She found a wonderful recipe for dilled green tomato pickles which quickly became my all time favorite pickle, and she canned so many wonderful jars of them . I figured out how to make refrigerator pickles with them that taste exactly the same (aka Quickles). Such a wonderful memory, and I am thrilled that I can recreate them. Btw I live in the desert of the USA and its still over 100F here

    Thank you for another great video! I only planted 42 tomato plants this year. The pink Brandywine were a favorite. Giant Crimson from MIGardner turned out great too. I had 4 that were that were almost 2 lbs each!

    So if the vines die and you pick the tomatoes you cant add acid to can them? I'm curious. I've never had that happen, I'm in zone 6a/b ish. Central Illinois. I've always picked everything before a surprise frost. Which can happen here. But, you never know.

    • @val2937
      @val2937 ปีที่แล้ว

      I am curious about the answer to that also. There are little to no leaves left on my tomato plants at this time of year (blight), but I have always picked, made sauce, added lemon juice, then water bath canned. Have I been putting my family at risk all these years?

    • @cynthiafisher9907
      @cynthiafisher9907 ปีที่แล้ว

    Those pumpkins with the frost are still usable and edible, tho. Since they didn't get too damaged. Same this the tomatoes, if they got frosted. You can put them in things like salsa, spaghetti sauce, pizza sauce, meals in a jar, then you don't need to worry about the acid levels especially if you pressure can them for a minimum of 10 minutes.

    What a great harvest to end the garden season! It's such a game of chance this time of year guessing how hard the frost will be. For the last three years we planted San Marzano tomatoes and also found they took a long time to ripen on the vine and always succumbed to late blight. This year I decided to try Amish Paste tomatoes and I can't say enough good things about them. We got a huge harvest (still harvesting daily), they're generally much larger than the San Marzanos, ripen beautifully on the vine and despite an inordinate amount of rain this summer, there has been no sign of disease. That was our experience here in north coastal Nova Scotia, zone 6a. You must sleep well at the end of the day, Chelsea, you do so much! Love watching your videos!

    That huge caggage put me in the mind of my husband's cabbage casserole.

    CABBAGE CASSEROLE
    1 HEAD OF CABBAGE COURSELY CHOPPED
    1 ½ LB. GROUND BEEF
    1 ONION, CHOPPED
    1 GREEN PEPPER, CHOPPED
    1 CAN TOMATO SOUP
    1 CAN WATER
    BLACK PEPPER TO TASTE
    GRATED PARMESEAN CHEESE TO COVER (GRATED WORKS BEST)
    PLACE CABBAGE IN BAKING DISH. BROWN BEEF WITH ONION AND GREEN PEPPER, DRAIN. PLACE BEEF OVER THE CABBAGE. MIX TOMATO SOUP WITH WATER AND BLACK PEPPER AND POUR OVER BEEF AND CABBAGE. COVER WITH FOIL AND BAKE ON 350° FOR 45 MINUTES. REMOVE FOIL AND SPRINKLE PARMESEAN , RETURN TO OVEN BAKE UNCOVERED FOR 15 MINUTES.

    I think I missed it… what did you do with the plants you took down in the high tunnel?
    I finally did some canning for the first time this weekend. The local orchard finally had the apple variety I was waiting for harvest. I made apple sauce and strawberry jam using recipes out of the Ball Home Preserving book. It was a lot of work, but fun. I checked the seals the next morning and every single one held!!!
    The only issue I ran into is my applesauce jars have tons of bubbles. I did use the debubbler. I think the bubbles were from running the apples through the blender and the debubbler wasn’t enough. A coworker said it should be fine unless I notice the bubbles moving or seeping out. But I sent photos to Ball customer service just to be sure.
    But overall I’m pleased with my first attempt. It took a year to get to being able to do this because I really wanted to learn as much as I could in order to safely preserve the food.
