  • Today, I'll show you how to make a really delicious twisted doughnut that's soft and chewy.
    This twisted doughnut is a traditional Korean food.
    So you can see this doughnut often in traditional markets and buy this doughnut often.
    I mixed tapioca starch with flour to make a soft and chewy taste.
    You can be happy if you eat fried donuts with fresh oil.
    Then give it a try it.
    ingredients
    160g of lukewarm water
    50 to 55g of lukewarm eggs (1 egg)
    40g of sugar
    7g of salt
    Dry yeast 6g
    25g of melted butter
    280g of flour
    80g of tapioca starch
    Cooking oil
    topping sugar

    저녁부터 갑자기 찹쌀 꽈배기가 너무너무 먹고 싶은 거예요.
    참아야지 참아야지 했는데 결국 야밤에 못 참고 찹쌀 꽈배기를 튀겨버렸어요.
    밤이니까 반죽기 못 돌리니 당연히 무반 죽 법으로 만들었고요.
    제가 예전에 어디서 봤는데 꽈배기 맛집에서 쫀득한 맛을 찹쌀 대신
    타피오카 전분을 사용해서 낸다는 걸 들었어요.(찹쌀탕수육 반죽에도 이걸 사용한다고 하더라고요)
    그래서 저도 찹쌀 대신 파인소프트 t를 넣어서 반죽을 만들어보았어요.
    파인소프트 t 주원료가 타피오카 전분이거든요!
    찹쌀이 안들어간 찹쌀도넛이예요.ㅎㅎㅎ
    갓 튀긴 찹쌀 꽈배기 설탕에 찍어 먹는 맛은 다들 아실 테니 뭐ㅎㅎ
    빵 결이 솜털처럼 폭신하고 부드러운데 씹으면 또 쫀득쫀득하고
    입에 구겨 넣음 한입에 꽈배기 한 개다 먹을 수 있을 정도로 폭신 쫀득해요!
    게 눈 감추듯 먹는다는 게 이런 건가 봐요.
    반죽이 너무 맛있어서 이걸로 고로케도 만들고 식빵도 만들어봐야겠어요.
    재료(10~11개)
    미지근한 물 160g
    미지근한 계란 50~55g(특란1개)
    설탕 40g
    소금 7g
    드라이이스트 6g
    녹인버터 25g
    강력분 280g
    파인소프트T 80g
    식용유
    토핑용 설탕

    레시피
    1.미지근한 물 160g,미지근한 계란 50~55g(특란1개)에 설탕 40g,소금 7g, 드라이이스트 6g를 넣고 소금,설탕,이스트가 녹을때까지 잘 섞어주세요.
    2.녹인버터 25g을 넣고 다시한번 잘 섞어주세요.
    3.강력분 280g,파인소프트T 80g 넣고 가루가 보이지 않을때까지만 섞어주세요.
    4.마르지않게 뚜껑을 덮고 실온에서 20분 휴지시켜주세요.
    5.20분 후 반죽을 겉면이 매끄러워질대까지 접어주세요(대략 10번내외)
    6.다시 실온에서 20분간 휴지시킨 후 다시 반죽을 3~4번 접어주세요.
    7.실온에서 반죽이 2배 부풀때까지 발효시켜주세요.
    8.발효가 끝난 반주은 가로 25cm x세로 23cm의 직사각형으로 밀어준 후 너비 2.5cm 내외로 길게 잘라주세요.
    9.반죽을 꼬아 꽈배기 모양으로 만들어 마르지 않게 윗면을 덮은 후 실온에서 2배로 부풀어오를때까지 2차발효해주세요.
    10.170~180도의 온도로 데워진 기름에 발효된 반죽을 조심스럽게 넣고 튀겨주세요.
    11.취향에 따라 설탕에 굴려 드세요.

    I just tried your recipe and it was an absolute hit! It made 17 pieces, and I thougt that was a lot until the whole family finished it within an hour 😂
    I adjusted the flour into 300gr of AP flour and 60gr of Tapioca flour bcs I don't want it to be too chewy. Also I added cinnamon to the sugar coating. Next time I'll double the recipe and froze 'em for quick snack 😋

      Aqui no Brasil o amido de tapioca também é chamado de povilho doce e fécula de mandioca. Não seria um nome diferente aí onde você mora?

      Corn starch cannot be replaced. Glutinous rice flour is replaceable.

      El almidón de maíz es insustituible. Se puede sustituir por harina de arroz glutinoso.
