What's the point in cutting all that meat in different cuts if you're just going to cut it all I to bits on that grill???

I could be wrong, but from the looks of it the place sells the meat first like a butcher shop, where the customers choose the cuts of meat from a display counter. Once they choose, the customers take a seat and cook up the cuts of their choice.
Also, since the Korean BBQ style is the meat being cooked at the table of the customer, the uncooked meat comes out in the traditional cuts that you see before it gets cooked and chopped up. It's like that at every place.
