This really is my very favourite dish from childhood! My grandma taught me to make this and I am so grateful to be able to share it with you! Happy Sunday! 💕

Made this last night and even though I ran out of scallions, it still came out great! Threw in corn kernels (lol, I know not supposed to but I like corn) and drizzled eggs over the top to make it like the other beef / egg dish.

WOW!!! Flo I'll bet you didn't think that your recipes could have a medical impact on one of your subscribers! Every since I saw this recipe, I've wanted to try it. I have a chronic illness that severely affects my digestion. I actually only eat about a half of a meal a day then have nutrition drinks. I still cook for my family regardless of whether I have an appetite. I made the beef and tomatoe tonight and I ate MORE of it than I have eaten of anything in weeks...WEEKS!!! It is so easy and tastes so amazing. I didn't thicken my sauce so it could saturate the rice and my family emptied the pot. I better double up next time and keep some frozen for those days when nothing else sounds good to me!

This brings back a lot of memories from dad's place in the Midwest. My grandmother and mom made it the exact same way you did with the tomatoes. They had the bell peppers as well with the black bean sauce. Good memories. Thank you for this.

Flo, don't you know that your grandmother's advice, namely to add a little of this and a little of that, was a gift from her, a rare and precious commodity known formally as "grandmawisdom." You were lucky to get such a gift. Cherish it. And keep up the good work. You are sharing your grandma with the rest of us. TY

LOL. I love that no matter what size ginger Flo uses, she always calls it a "thumb size". My mum used to make it (and she never use any measuring when cooking either), but with sliced beef with tomatoes that she grew herself. Thank you for a walk down memory lane.

This is a popular dish in Hawaii too, lovingly referred to as beef tomato. We use flank steak instead but I like the ground beef substitute for more of a stew like texture rather than stir fry.

This looks really good! What I've done in the past for recipes that call for those thin slices of ginger that I've found I'm no good at making (horrible knife skills!) is to peel the ginger and cut it into smallish chunks and then use my mini chopper to mince it up so I don't end up biting into a huge piece of ginger. A recipe for Vietnamese Ginger Chicken from Runaway Rice is the one that I learned I have terrible knife skills but yours are super good! Best wishes to you and yours!!!
