For me the most flavoursome part of an aubergine is the skin and I burst into floods of tears when I see someone peeling one before cooking. Sacrilege, absolute sacrilege! That said, your recipe looks scrumptious and I shall be trying the meatless version (with skin). Thank you!

In Hungary the weather is as usual every summer, hot but bearable. in Greece though, my family told me that they already had the first 40C, which isn't usual for July and they had to cover the tomato plants because they were getting fried from the sun, first time ever having this problem. My own garden had a big problem with slugs but now it's fine. I'm waiting for my eggplants to grow so I can try your recipes!

Sorry your summer is so unpleasant. But this dish looks fantastic. I'm back from holiday in Turkey. And I can say that while they do have sun it was too warm. But I do think that traveling to the south is the only way to get warm this summer sadly. 😀
