INGREDIENTS FOR 2 PEOPLE:
1 Courgette
100g Spring Greens or any large leafy vegetable (or one bunch of tenerumi, if available)
1 tin (400g) of chopped tomatoes
Handful of fresh spinach or two balls of frozen spinach
2 cloves of garlic
Basil leaves of dry basil (optional)
Olive oil, salt, and pepper
Water

What is this called again? Can't wait to try it!
The name in Italian is ‘Pasta co I tenerumi” - tenerumi being the leaves of the zucchine (courgette) plant. It is a summer dish for Sicilians, I live in the UK and I have replaced the tenerumi with spring greens and they are very similar. Please let me know how you get on, but try and follow the recipe as much as you can. Take care, Francesco.
