National Braai Day - How to Make a Lamb Curry Potjie on the fire (South Africa Heritage Day Recipes)

- We love a good braai, and really enjoy trying all sorts of recipes on the braai & fire! In this episode, we show you how to make a potjie with a difference, a delicious lamb curry, while celebrating National Heritage Day. Hope you enjoy our recipe and #NationalBraaiDay.

LAMB CURRY POTJIE
Basic Ingredients for a Size 4 potjie:
1.5kg of lamb pieces (stewing pieces or potjiekos pieces)
3 large onions (Brown or Red)
3 fresh bell peppers
3 to 6 garlic cloves (to taste)
Fresh ginger (about the size of 1 garlic clove, or to taste)
40g of Mutton Masala (or preferred curry powder)
2 cans chopped tomatoes
Additional/Optional Ingredients:
3 cans four bean mix or kidney beans
1 or 2 large brinjal (eggplant)

I am doing one right now on the flat bottom poitjie on the induction cooker and I live in the UK
I've put a bit of pork belly fat as well but much the same as you.

@@TravelGigolo just done 3 hours and I have been chucking tins of chickpeas and red kidney beans.
Its really good.
Also made naan breads from yoghurt and flour and just cook in big pan till golden.
Great! I haven't tried making naan bread, I'll look it up.

@@TravelGigolo dead easy. Just yogurt and flour in a soft dough and roll out a small ball about the size of a child's fist and on the pan reasonable heat and it doubles up and gets hollow. Bit of fun

Very interesting take on potjie. Thanks. I am a pensioner alone in RSA and make a potjie once a month using my Sassa government pension. A no 3 pot gives me a month of food which I freeze in small bakkies and serve on rice or pasta as needed. I will be trying your curry version soon and wish I could invite you to try. Take care
We also prepare our meals in advance, not always a poitjie though but enough to freeze in little containers for a couple of weeks worth.

Looks divine! If one wants to use potatoes,when is the best time to add them?
I generally allow about 30 to 40 minutes for potatoes to cook and absorb flavours. Longer than that and they may start getting mushy. So, for me, 30 to 40 minutes before taking the heat off.

Will the oxtail browning for a a potjie take longer to brown?
I find that browning is quicker in a cast iron pot because it is heavy and has a lot of heat mass.
