Just watch for too hot fire underneath potjie, it can burn your food easily, actually only coals...and a fire one side from where you take more coals if needed, charcoal or brickettes works very well also...making potjie, you should have lots and lots of patients, basically cooking on coals only and not too much fluid...
There is different size potjies, you can bake a bread in it, cook rice, maize meal( traditional South Africa dish) and all different proteins. im curious how you obtained your potjie?
