@@saralakhanter6733 I made my own version today. ACV, cloves, elaichi, pepper, garlic bulbs, thin sliced beetroot, chilli, carrot and ginger. Topped it with hot water. Salt and a little sugar.

Almost about to finish all of it today 😄 Few observations: (i) sliced chillies, ginger and garlic give it a great aroma (ii) I stored it for 48 hours before mixing it up and digging into it. (iii) I have been using some of that water & ACV from the jar to marinate my fish and chicken - results are very good (iv) an acquaintance from Kerala said, this is usually made quite salty, but I preferred it milder Will soon make another batch !

I add vinegar to it and some haldi it can last for a month in the refrigerator

Actually its not pickle, its brined vegitables or shallets.
Use it as it is. Sea salt will do all the job in the jar.
