yep... it's the buttermilk.. what it does is tenderized the chicken. Keeps the chicken from drying out. I have a similar recipe Joe for fried chicken except for the wine. I use peanut oil. My trick is to use a gallon size freezer bag for my breading step less mess. I also use a deep fryer. It's an outside job. The house gets too smoky.

I really like this Recipe Joe, I learned a couple of cool tricks too. Like the Tendon Release on the Legs, that was brilliant. I do a similar but not the same Brine, I also like the Bacon Fat part. Great Job!!

My dad always raves about some fried chicken cooked by a Sicilian man ( it was a friend of a friend, but.I believe they were both Sicilian born) Seem to remember the guy used only iron skillets.! & I think I had breakfast at least once prepared by this guy, he was a fine cook! He loved to make grits! Well why not it's pretty close to polenta is it not? Is here really any major critical difference beside prep?

You can make really good fried chicken for less than 1/4 this price. Brine for only 3 hours will do nothing. Like a half cup of corn starch lol you don’t even need corn starch this isn’t a sauce. Lemon zest on fried chicken, no thanks. I just think it’s all a little overkill.
Great job joe please do a show on peppers tomatoes and onions stewed with corn oil and basil cooked for hours till the natural oils from the peppers come alive can be used as a garnish great to eat like soup more flavor than can be beleved old time siclian thaught me how to make it he would do two hundred jars canned last for two years or more Thanks joe from Paul Cilluffo

Joe must be from south Italy because all the things he's using to prepare his chicken is what we've used in the south for more then a 100 years... The only thing we didn't do was press the flour into every nook and cranny.

I never seen you washing the chicken some people that do not know how to cook wouldn't wash a chicken or clean it please show people how to clean the chicken before they start marinating it

I give you credit for all the work you put into this. And the results look good. But Im here to tell your viewers, not only can you make great fried chicken without half these ingredients, you can make it in alot less time. Buttlermilk is way over rated for starters. And half the stuff you put into this will never be tasted OR make any differance in the finel product.
I just had a late brunch this afternoon for a pancake at IHOP when I read a combo of hash brown potatoes, Canadian bacon, eggs, sausages, served with pancakes, it would have been good ‘ cuz I am starving but I find them all SALTY for I have to camouflaged all with catsup, still disappointed, should I go back and eat again, I will have to remember to say NAS ( no added salt) maybe after six months or so...😟😟😟🤨🤨☹️☹️☹️🇺🇸🇵🇭

Avo Garabedian be careful using Himalayan salt I use it to but it is strong. You don't need that much of it.
