    We just loved dining at your family's restaurant-always a mouth watering delight. I still think about the fresh perch dinners and all the house favorites. Keep the vids coming Joe- they are wonderful.

    I watched the video twice to make sure I had it right, and, wow!, was it ever worth the effort. Joe, my friend, you hit it out of the park with this one. Absolutely the best chicken parm we have ever had. The whole family raved about it. It was a lot of work for and old guy like me, but it turned out so well I don’t mind. And it paired perfectly with your sauce recipe. Thanks for the great videos, and for your taste in background music. An old jazz DJ like me doesn’t hear good music in enough places.

    I didn't think such a thing was possible, but I think I've gained ten psychosomatic pounds binge watching this channel! Reminds me of the children's story about the guest invited to dinner who could smell the food cooking but was never actually served. His host said the smell should have been nourishing enough. So the guest got revenge by telling the host to spend a night on a cold mountain peak and be warmed by a fire on the mountain peak across the valley. Needless to say, the guy didn't get any comfort from the fire across the valley. But I swear, I do get comfort from watching these! The power of imagination I guess. MMmmmmmm. I wish I knew these tricks and recipes 35 years ago, maybe I'd still be married!

    I put a nice layer of smoked shaved ham under the cheese, and the sauce over the cheese then a garish with parsley and parmesan.

    Wow, that looks so good! I make breaded chicken cutlets for my family all the time, but never like this with pancetta and almond. I am definitely going to make it this way! I love all your recipes because they are so similar to the way my grandma and my mom always made it, but yours always include a little delicious twist.

    Joe: When I was growing up in Brooklyn , NY it was very common to find Veal Parmigiana which I ordered all the time ! I never heard of using chicken .While I like chicken it no way compares to veal Then all these pizzaria's started opening in non-Italian neighborhoods . Now if I want veal I have to go to a real Italian restaurant ❤

    Wow, this is a recipe I have been making for years. Only difference is I use basil in my mix. I will try the rosemary next time I make it. I love your kitchen.

    This is one my family's favorite recipes. I am going to have to try the almond, pancetta, rosemary breading. The only thing i do different i always add a little homemade alfredo as a finishing touch. I absolutely love the Tomato sauce mixed with the alfredo! I'm an Irish person that should have been Italian ! Me and the wife are wanting to go to Italy next year. She wants to see Tuscany, and i want to go where the best food is. Mabe you could give us some suggestions. Oh and i love your channel. Very informative! I would love o see what you would do with a prime rib...Italian Style!

    Hello Chef. Watched your video! Awesome!! I tried it for the first time today and I think I messed it up. 1. What is the exact name of the tomato sauce you use on top of the pre-baked curtly ? 2. I used mozarella but the cheese slices would not melt. Thank you!

    Temperature on the oven please. Some of us have never cooked much before. I am just getting into cooking. Also please a good red sauce. I buy jar and too salty. How do you make the red sauce.
