Thanks for the chopping lesson. I use to do this but it was painful to my left palm. I now just filet the meat without chopping anything. It's so much easier.
As a chef you must know kitchen rule that chefs are not allowed to wear watch tduring cooking in kitchen.... Anyway, I admired your skill and handling to a particular recipe with easy to understand steps.. Thank you chef
