Hmmm I haven't tried this the unsweetened but if I had to guess I would use 4oz of the unsweetened chocolate bar and 1 cup of sugar. Hope that helps! :)

My grandmother (nonna) insists that scoring (half cuts) into the biscotti log before baking is the key to getting the sharpest/cleanest cuts later on.
They need to give you a show on Food network.

kuzzie Oh sure! You could definitely do that. But you should bake it a bit longer in the first stage. It may take up to 50-60 mins :) Enjoy!

Sure I would just add the water without the coffee :)
And you know, biscotti literally translates to "cooked twice" (bis cotti), so they wouldn't be biscotti if you non cucina them bis.
