    I love biscotti, they're one of my favourite Christmas cookies. I like the dry, crispy texture to dip into coffee! The whole hazelnuts in these look great!

    i brought these to school and everyone loved these! even my sicilian dad liked them and he's usually very critical when it comes to biscotti!

    We are studying Foods Around the World this week and starting our Holiday Cooking unit next week. This is the perfect recipe for us right now.     Beth, these Chocolate Hazelnut Biscotti look awesome.
    A few years ago i made almond biscotti, and the texture is perfect for dipping in hot drinks, like you said.

    My grandmother (nonna) insists that scoring (half cuts) into the biscotti log before baking is the key to getting the sharpest/cleanest cuts later on.

    Tried and LOVED this recipe beth (",) trying again and just wanted to ask how can we make sure the log is cooked in the first stage? Test it like a cake with a skewer?

      Fizza Yaqub Exactly! A skewer is the way to go :) And it will expand in size as well.

    hi beth~ I'm wondering if it's possible to prepare the dough the night before? shape, freeze it.. and bake it the next day? if so, how long more should i bake the dough for? Thanks!!

      kuzzie Oh sure! You could definitely do that. But you should bake it a bit longer in the first stage. It may take up to 50-60 mins :) Enjoy!

      Hmmm I haven't tried this the unsweetened but if I had to guess I would use 4oz of the unsweetened chocolate bar and 1 cup of sugar. Hope that helps! :)

    It looks like they are all dry ingredients....if i use a hand mixer will they just splatter everywhere in my kitchen?

      yes but that's what you need in order to dry out the cookie and not "cook or burn the cookie" too much :) Enjoy!

    And you know, biscotti literally translates to "cooked twice" (bis cotti), so they wouldn't be biscotti if you non cucina them bis.
