I feel that some of the skills I was lacking in (or missing completely) are going to be better just by watching your videos! Also, I have 4 white German shepherds (Yeti, Winter, Liam, and Castielle) who will be coming with me. My big guy and master protector, Yeti, looks a lot like Akela! she is actually smarter than almost everyone i know. i love shepherds but it's a little depressing when my dogs are smarter than me. i've put off getting another one since my last one died but watching akela makes me really want another one. she is really an amazing dog and linnea has done such a great job with her.
Just some info, you can eat the greens with the stalks from the beet. Wash and cut it in small pieces, stir-fry it with other things or cook it with your stew or a oven dish. Even when there are small holes from flies in the leaves, its still good to eat. Please don't trough it away, there are a lot of nutrients in it! Many gardeners clip regulary some external leaves from the beets, while it grows, for salad or cooking greens.
I love living vicariously through you and your journey’s. I remember helping my grandmother can food and I loved it. She canned cinnamon apples made with “red hot candies” that was simply AMAZING. Smart gurl Akela, such a good gurl too😊

Hey you Those beet tops are amazing when cooked. If I didn't leave a couple inches of green on top of the beet...my beets lost their pretty color Apple 🍎 sauce , even when canned can easily be made into apple butter, like on Christmas morning. Smells amazing. And tastes delicious 😋. And a few red hots brighten a bowl of apple sauce......Tried and true
Loving all this prep. You mom is awesome for letting you have the root veggies. But my heart was saying, why are you throwing the greens away. They are a great source of vitamins I'm snuggled in my thick layers of blankets whole viewing. No heat but at least it's only in the 30s. Thanks for sharing. When I get a bigger vehicle (I'm in a SUV right now) I'll get a heater.
It may have been cold when the vid was made but this last week in Northern Wisconsin has been absolutely incredible. The next couple days are predicted to be miserably wet & windy however. That's Wisconsin tho... wait 5 minutes & the weather will change. Welcome home

I know it's not the "traditional" way to make it but when I make apple sauce, I cut the apple pieces much smaller so that I can leave the skin in and just boil it all down until it turns to mush. It's way faster, with less waste. And the skin is packed full of valuable nutrients anyway. Tastes just as good to me.
Spring of ‘22 I harvested enough beets to can 14 quart jars and 8 pints. My husband and I love pickled beets. We had a terribly hot and humid summer here in south central Oklahoma and my garden suffered. I was still able to get my peppers, bell peppers,potatoes, tomatoes and okra. Green beans and peas did okay but we lost a lot, because of a freak heat wave the first of April. It got 100° for more than a week.
You are such an inspiration…I don’t know how else to say it. Every time I watch your videos…it sparks my soul and my heart. I know we viewers only see snippets and not 100% of everything that it takes to live this kind of life…but you make the unseen, seem possible. Thank you…you just inspire me immensely and I am so great full, thank you 🙏🏾
I hope your canning chicken veggie soup, beef veggie soup/stew, mixed veggies and mixed fruit. You can also do meat loaf, spaghetti in Sauce with meatballs, Bacon "take raw bacon and wrap it in a paper towel and can it." it doesn't cook it all the way but enough to get it mostly done. Variety is big when your headed into the wild for a long stay. You can also make cookies - bag and freeze them. Snacks like hard candy and bar chocolate.
Love watching Akela learn tricks - gives me great ideas for my pup, who loves having a job. I've been teaching him how to "help" in the kitchen (closing drawers and the fridge) after I saw you doing it with Akela in an older video and he loves it! Thanks for the inspo and your soothing content. :)

Many summer nights spent riding over from Menominee to Sister Bay just to eat at JJ’s and have a Bernie! I've always included mostly, hubbard, butternut and butter up but there are many different varieties which store well through winter.

Make sure to use you carrot tops and beet tops for pesto. Super yummy. I don't know if you can preserve pesto but might be something to look into. Get more yield from your crops. Love the videos they are my favorite thing to watch every week!

You can also make apple pie filling to can. Then when your ready for a pie just make the pie crust. Then you can bake it. 😊 Pie crust is feet simple if your bringing flour with you.
Can't wait to watch your time in Wisconsin. I love love love to make applesauce this time of year. I add a little bit of monk fruit (sugar) and cinnamon to mine. So for the size pot you had probably 1/4 Cup on monk fruit and then just sprinkle a bit of cinnamon on top and then stir. One thing to note, you can freeze applesauce. So if you find some that aren't sealed, just still em outside in a snowbank and they'll be fine until you thaw and eat them. Many blessings on your journey!

You could also dehydrate all those greens and powder them. You can add that to anything for extra nutrients!
