dont knock pocket holes. About every woodworker I see on TH-cam uses them. Every piece of furniture made in the last century uses them. Just use glue which is the real strength anyways, And pocket holes are the clamps.

Everyone uses Baltic Birch on their shop builds. Is this required? Or can I use more affordable/accessible materials?
You can definitely use more affordable plywood. Sometimes it's easier to work with plywood that won't warp or bend. Usually that's Baltic birch
