Fun family day! I've started to change the angle of the head cut off on the gills, so you go from very front/ top of backstrap to just behind the anus. You gain meat up top, and give up a bit of rib meat, but only one quick cut. Bring an old serrated knife, so you don't dull your edge on your good knife. Keep up the fun adventures.
