Healthy Sheet Pan Pancakes
By: The Jaroudi Family
Serves 8
Ingredients:
1 ½ cups plant milk mixed with 2 Tbsp lemon juice
2 flax eggs (2 Tbsp flax meal mixed with 6 Tbsp water)
2 cups oat flour (176 g)
2 tsp baking powder
1 tsp baking soda
½ tsp vanilla powder
6 Tbsp date sugar
¾ cup of fresh or frozen fruit
¼ - ½ cup of dark chocolate chips (optional)
Directions:
1.) Make the flax eggs and let the plant milk sit with lemon juice for about 5-10 minutes.
2.) Add all the dry ingredients into a large bowl and slowly pour in the plant milk/lemon juice mixture and the flax egg. Mix well and let the batter sit for around 10 minutes. It will thicken! Fold in half the amount of fruit to the batter.
3.) Using a 15x10 baking sheet pan lined with parchment paper spread the batter out evenly.
4.) Add the remainder of fruit and optional dark chocolate chips.
5.) Bake at 425 degrees for around 15 minutes.

Especially with frozen fruit you can cook it down and mash it in a pot. That will turn it into a jam/topping that you can either put on top or swirl into the batter

Yep, with baby coming, you need to stock your freezer for all the days to come when you're too tired to even think about cooking! I'm usually out the door in the morning to either my workout class at the Y or my line dance class. Eating on the go is a thing, LOL! And when we both had Covid in December, I was so thankful to have lots of leftover meals in the freezer!

Can you use date syrup instead of date sugar?
No, because one is a wet ingredient and the other is dry
Maybe a dumb question, but since you let the batter sit anyway, is it really necessary to make the flax egg as a separate step instead of just incorporating into the batter with the required extra 6 TBS of water?? I am supremely lazy when it comes to cooking nightly after 50+ years, so keeping it simple and reducing steps/dishes is always a good thing for me! Since I quit sautéing with oil I even find the "water saute" step totally unnecessary unless I need to actually take the time to brown them or add them pre-softened to a recipe. Am I missing something?
Also, I'm thinking of making savory versions of this instead of making separate fritters/muffins/pancakes! Thanks for all you do!!!
Yup I've tried it many ways. Following the directions will give you the best outcomes.
I have been craving pancakes so this is definitely something I need to try soon! When making your own oat flour, would this count on the daily dozen as a grain still?
He recommends no flour, only intact grains. That being said I have seen him eat flour 😅 - we have this whenever we want pancakes but day to day eat oat groats, steel cut, or rolled oats for breakfast.
I think I'm going to make this tomorrow with cinnamon , walnuts and chocolate chips. Would 9x 13 be too small?

1/2 tsp - you could double it if using extract.

Hi I love your recipes Best of luck for your pregnancy. Can I use chickpea flour in this and what else can I use it in - I've bought SO much of it! ?
I looked online and saw lots of chickpea flour pancake recipes, so it’s probably fine.
Hi, chickpea flour is great for like a egg replacement meal: quiches, frittata, etc. I wouldn’t recommend it for this recipe. Something more neutral would have been results: whole-wheat, Einkorn, buckwheat.

Brittany just want to verify in the video you state that you used 1-1/2 t vanilla powder but the written instructions say 1/2 t. Please verify which one is correct. Thanks

Can I use chickpea flour? I've been subscribed to you for about 3 years and don't receive any of your recipes that way. Same with many other youtube people. What am I doing wrong as I subscribed very early on and chose all updates?
You can hit the bell to make sure you don't miss a video. I wouldn't use chickpea flour, but whole-wheat; einkorn flour, buckwheat flour, etc.

It was 3/4 cup we measure it all out. You can add as much fruit as you’d like though
