I love the show, definitely one of the better SW series. I think we can say this ship is larger than the Falcon, just think of the cockpit and the space around the crew seats there. In terms of going larger I think you might want to consider using technic turntables for supporting the engines as you’ll have to combat the weight. If you do turntables and gears that may also help you with the transformation to the later ship. If you could Will definitely follow your build series on this.
I can’t wait to see how this comes along! Are you going to find a custom figure for SM33 (which the other day I realised was code for Smee from Peter Pan, which is also ironic as Jude law has played Captain Hook)?
According to Wookieepedia the Onyx Cinder is about 55 m long, which would make it almost 20 m longer than the Falcon. Minifig-Scale (I'm using the 3 studs = 1 m) would be 165 studs long, which is really massive... Whatever you decide, I'm sure this build series will be an interesting journey and I'm in for it! :) I'm especially curious about how you plan on achieving that Ep. 6 "appearance change"! Have you got any good sources for reference images except the show itself? A quick Google search didn't get me very much just now...
