Oh my goodness! That looks amazing! I used to make the family Christmas cakes in various sizes, traditional ones with brandy - one each for my nan, my grandma, my parents and a small one for us. I have since lost my grandparents and my parents, so the baking stopped as I lost my enthusiasm. But I made a cake last year again and it made me smile and brought back lots of happy memories, as well as making the house smell very festive. Maybe I should make one this year, that looks simple and the tip about using a square tin is perfect, thank you.
Looks delicious Jane and not too complicated. Don't know if you do this or not, but I was once told to loosely cover a freshly baked cake with cling film whilst it cooled to keep the outside moist and it worked. 😃. Will have to try this recipe at some point. Thanks again to you both for another great video. 🤗🌲
I made my own Baileys today, so easy and so cheap, I'm trying to find every recipe I can to make all my own food. Mine cost about $7 instead of $42 a bottle at the LLCBO here in Canada. The dried fruit has risen in price, also butter, cream, ricotta etc is making my recipes cost more to make but still less than store bought, my sausage rolls are a hit but also cost more.
I can buy even a half bottle of whiskey for 7€ if I wanted to make it…do you make your own whiskey to make it that cheap. Please share your recipe. Thanks.

Call me an alcoholic but when I saw this lovely cake I immediately thought: wouldn't it be extra special to pour some bailey's over the finished product?! Just like the English christmaspudding. If you didn't want the extra alcohol you could add less in the batter, and replace that with water or maybe (plantbased)milk. But you would have so much more flavour if you didn't cook off all the alcohol. So very sweet to bake some extra for a friend. Merry Christmas!

I have mini loaf pans that I will divide this recipe into, so we can eat small portions with out the remainder going bad. Fingers crossed 🤞 that it will freeze well.
Your cake sounds really nice. I make my cake the middle october and 'feed' it brandy. My family wont eat shop xmas cake, i even bought them from different proce ranges.ive got ahead this year and also got my pudding done too. Its got guinness and brandy. hiccup loooool
You mentioned people serving Christmas cake with custard. Over here, years ago, a tv cook suggested Advocat instead of brandy butter on Christmas pudding. You wouldn’t do it often but it was better than brandy butter …

I found *O'Mara* Irish Cream and it is soooooooo much less expensive than Bailey's, and it's *better tasting* to me. However, maybe it's all comparable price in Europe?

Lovely cake! How did you cover the outside with marzipan?
Roll it out thin, brush the cake with warm apricot jam, smooth the marzipan in place with my hands.

That’s unusual. We usually have custard in Australia with Christmas pudding. Love the recipe - have the ingredients except the cherries to try it out.
I promise I did find a recipe where they served it with custard…..I’m going to try anyway
