    I love all your recipes, Ann. Asian food is the one cuisine I have missed since I started keto a few years ago. DIY instant mushroom powder. Whiz dehydrated shiitake in a dry blender, Magic Bullet or coffee grinder until fine and powdery.

    I have all the ingredients to make this , sans the nori. I am currently fasting but I can tasted the flavors and crunch in the way you show and describe it. I am really looking forward to trying this. I just got an convection toaster oven, so I believe that counts as an air fryer of sorts. I want to try the complete method as it sounds the best. Thank you for all the hard work, beautiful videos and tasty foods.

    Another awesome recipe! 🤩 can you also do a video on HOW you keep your airfryer basket that clean looking???😅 I am on my 2nd cuisinart airfryer because I just could not save my first one. I was advised to use oven cleaner and it ruined the finish inside. No matter how much I try to keep my new one clean and maintain it, I can see the burnt oil build up starting again and it’s barely a few months old even the glass door is starting to turn brown again😬

    Can I make this without kelp powder? I'm trying to keep my iodine levels lower, due to Hashimoto's thyroid antibodies. The nori isn't too bad for 3 sheets, but the kelp power is a lot of iodine in one day.

      Yes, you can skip the kelp powder. It just adds more flavour.

      Thanks for the question! I avoid MSG for a few reasons. Although MSG is naturally occurring in many foods, it is also a chemical additive.
      Many years ago, MSG was produced by extracting and crystallizing glutamate from seaweed broth. Today, it is produced commercially by fermentation of starch, sugar beets, or molasses.
      MSG spikes insulin. Insulin response for people following keto plays a factor because it causes weight gain, inflammation, diabetes, high blood pressure, etc. It can effect ketones and kick me out of ketosis. I am currently maintaining on keto for diabetes prevention.
      MSG is “generally recognized as safe” (GRAS) by the FDA is just not good enough for me. Although there are no proven studies by the FDA to confirm that MSG causes headaches and nausea overall, an independent science group did report that individuals who are sensitive to MSG did receive short term, mild symptoms of headaches, palpitations, etc.
      To me, I would just rather avoid it and flavour my food naturally if I can help it. I don’t see the need for it.

    Did anyone else notice the swastika? I am eager to know the reason for this.

      It is not the swastika - it is one of the many symbols in buddhism. Swastika is flipped the other way, not the same symbol. The mushroom seasoning is a vegetarian food - many buddhist followers sees the symbol as an indication that it's okay to consume for vegetarians.
