Mutations are occurring in the countries that have ALLOWED the spread this past year. Everyone in East Asia and Australia are somehow fine because of good pandemic response. The spikes alone now compared to early 2020 are insane since UK variant was discovered in September. Before it was 300 cases a day here in March, not its 37,000 average. It really doesn't even matter where it came from (which btw is still undetermined), it's the people who still are spreading it. But yeah, let's just blame the Chinese. You are missing a huge factor in Geography, it's the limitation of protein sources in China. Chinese has less arable land than European/American per capita, unlike vast plains in Europe, only about 1/3 of Chinese lands are plains. This means very few lands can be allocated for animal product industry, the rest are all used to grow foods people eat. Therefore it's natural to find alternative protein sources we view as "exotic" today. It's a similar story all across the world, you can find snail in French cuisine, camel in Dubai, alpaca meat in southern America, etc.

I think another reason that there are many kinds of food that Chinese people eat is that the population pressure in China has always been relatively large, and ancient times has always been a farming society. Therefore, we need to find more sources of food, grow many edible plants, and also we are very good at cooking. Another point is that this year China has issued a new policy to change dogs from domestic animals to pets (i.e. forbidden to eat). This is also to respect the values of other countries in the world. Do hope we can understand and respect each other more.

It should be mentioned that some food habits might be result of the last decades of poverty in China. My parents tell me that before they immigrated, their lifestyle back then wasn't nice at all. The access to the common meats that we know now was hard, so mostly of the families ate what they could get in the wild (farm rats, snake, pangolins, etc.) and some were self raised animals that they even get to consider as PET.
The traditional medicines teaching was also a primary reason to eat this meat because back then (30-40 years ago) the access to modern medicines was also difficult, so it was easier for most family to try traditional ways which was a more available method to treat their health matters.
Nowadays the traditional medicines methods is still very ingrained in chinese traditions so some people still consume these meats. And also, after they have tried other ingredients that have resulted to be a delicacy, it is not strange that nowadays there are still some foreigners considered strange meats eating habits in Chinese culture.

People in China eat a varied diet because throughout history in many moments due to poverty and food scarcity wild foods were the ones available. Because of that they learned to prepared these foods and regularly consume it.
It's funny that many people are quick to point the health risks of game meat while ignoring the proved risks of high-processed foods, of pesticides or industrial foods that can also be contaminated and cause deaths.

People here at home in New Zealand can be very ignorant about other people's culture and food. I follow many popular Chinese food vloggers and you can see that food is a 'treasure' from the land or water to the plate. Yes there are strange things in the wet market that I haven't seen the vloggers I follow cooking, now maybe I can understand they might be for medicine or a regional delicacy, I know food is very different region to region. I'd ask them why would they eat raw eggs, or vegetables that were not cooked, or slurp oysters, pickled eggs or ask them if they've ever seen the type of fish their fish sticks came from or what part of the chicken was a chicken nugget, but by far if they said eating an animal for all its parts was disgusting and i was hurting an animal, I'd ask them why Americans would throw and waste all these parts of the animal and only eat the meat part.
Needless to say I would get in trouble for defending my culture and "mad mouthing" theirs, and they never got into trouble, even when one threw my lunch into the garbage three days in a row. Grade school was a riot back in the 90s.

As long as you are breeding certain things you consume, there's far less risk involved with consumption of a given species. The issue then stems from the diseases that have been breeding in a given kind of creature up until it is domesticated. For that reason, a bit of research can make many animals safe to eat by eliminating the diseases they have, and might spread into the human population. But whether or not you are alright with eating animals, or would just prefer they live free, wild lives, that pool of disease is still there, still unexplored, and canceled out (like we've nearly canceled out polio), and so, whether you domesticate them, or not, the risks will remain until studied and removed.
My question for you guys is what are your thoughts on stories involving people in the mountains eating wolf berries and living to ridiculously old ages? Do you know how that kind of thing might work?

Poverty = less accessibility to meats like pork, beef, chicken, ducks. Hunger drives people to eat things they would normally not prefer to.

what people are failing to understand is the real reason why Chinese people eat anything is because of survival. During the Mao regime when communist China closed its doors to the world, many people have died due to starvation and diseases. People have to survive by eating anything that moves and grow, we are not talking about 1 year or 2. Since 1955 till 80s.

A much more important question would have been why do Americans seem only to eat a dramatically smaller percentage of food resources in what is actually available. I’m not praising the excessive nature of what China is doing. However, as a cook who studied some measure of nutrition. It has been noted repeatedly that Americans are by far the most picky of eaters. I leave you the reader to decide for yourself whether or not that is healthy.
