If you round the bottom when you turn a corner, you will get a faster flow and less turbulence in these areas. Think a angled track like for a race car or bicycle. When the water hits the flat sides and bottom it bounces back causing the water to slow but by adding that little change when you are navigating a corner you will notice a vast difference in speeds. Also, like the commenter below, why not have a long shaft with a bearing at the bottom to secure it and allow the water to fall to the bottom before striking the turbine blade.
I think he is more of an amateur builder and professional brick layer than a hydrologist. I make the same observations in all his videos where he can improve, but you can't argue with the fact they work anyway for what they are, and they look pretty nice. There's only so many ways to change things up and I don't think he plans on powering a house either. Just nice garden features, which works fine.
I do not know why, but I like watching and hearing the brick laying without the music. I wish it was that way for all these videos.
