    I’ve noticed that broscientists (like the Gary guy in this video) actually seem to be the ones who are over complicating things.
    While evidence based guys like Layne are making topics such as nutrition more straightforward and easy to understand.

    Past President of the National Board of Physician Nutrition Specialists here and I learned something in this video! Seems like even Dr. Norton was surprised upon searching that glycemic load is lessened by blending whole fruit. I’ll have to dig into that with other nutrition colleagues, but I’m certainly ready to buy that if you blend whole fruit, keep all of the contents, losing none of the fiber, that there is no significant difference. Besides, comparing blending and drinking whole fruit with going out and eating a bacon egg and cheese biscuit from McDonald’s… I mean come on Gary,

      I've heard others suggest the seeds (on some berries) when broken up in the blender contribute to this effect. When the fruit is eaten whole the seeds stay intact and just pass through your system.

      Do you think it has something to do with salivary amylase causing a quicker breakdown of carbohydrates when chewing /mixing with saliva ? I'm curious as well. I'd guess you get less amylase production when just drinking it.

      One argument I've read is that blending fruit changes the fiber structure. I mean probably, but does the effect really lessen the FUNCTION of said fiber? Insol is insol, sol is sol. The idea that blending insol makes it more like sol is genuinely stupid.

      @@Jordy-927 thank you. I did. Conferred with another colleague of mine, PhD Nutrition from Rutgers. Hard to explain but one issue that concerns me is we also need to see insulin area under the curve. If the rapidity of the glucose absorption from blending is resulting in a massive blast of insulin that’s causing the glucose area under the curve to be less, while the insulin area of the curve is far higher, and even more so in relation to the reduction of glucose area under the curve, is not a metabolic advantage.

    Non homogenized fruit cocktails, where the fiber is LESS available to digest (soluble and non-soluble), would spike the GI more than the homogenized one where the fibers (both) are broken down to smaller size hence making them MORE available to digestion which would delay sugar absorption. I've made the test using a CMG device .......Apple, strawberry, raspberry and blue berry smoothie (250ml): 6.0 mmol 45' after drinking it; the same fruits cocktail (whole): 6.7 mmol after 45' consumption. That might not apply to everybody out there though...... Thanks Dr Norton; good point, excellent videos 👍👍

      Very surprising results - I will definitely experiment with this too just out of curiosity. Also, when we blend fruit, most of us tend to add other ingredients (veggies, protein, nut butters, etc) which, I’m guessing, would further lower the blood sugar response.

    Thank you for dispelling this common myth that I too started to believe in due to not critically assessing the evidence. It didn’t occur to me that there would be people publicly lying over things that would eventually be fact checked by someone capable. It is just bizarre how much that is happening, especially in claims about nutrition.
    Also just wanted to say: loving this friday format. I don’t always habe time for the full videos of my trusted nutrition scientists and this format is regular entertainment and information. Thanks for these and keep up the great work you do against this tide of nutrition information “entropy”

    Excellent video, we now live in a world where putting out a 30 second tik tok video makes one an expert. There is now cross pollination of channels so the same "experts" (like chiropractors who seem to know how to cure everything) appear everywhere...all claiming their info is "science based"! Thanks for giving us an example of what science based actually means (although not all science is good science)

    It makes sense that blended fruit would spike blood sugar more quickly because it doesn't have to be broken down as much as half chewed (because I gobble food too quickly), so I'm glad there's a study and that someone looked it up. I assume that pounding my smoothie with protein powder and full fat yogurt will also dampen the blood glucose response.

    Those study results were fantastic! I wanted to give more likes to the video, but YT so no.
    A long time ago I saw a study showing that gastric emptying is slower when you blend soup than if you don't. That would cause a slower release of nutrients into the bloodstream. Why this is though? No clue.

    One thing you can hold bananas accountable for is that blending flavanol-rich fruits and vegetables with high-PPO food like bananas releases the PPO and destroys the flavanols available. While bananas are delicious and healthy food, if you are trying to consume flavanols, should consider preparing smoothies by combining flavanol-rich fruits like berries with other ingredients that also have a low PPO activity like pineapple, oranges, mango or yogurt.

    From my experience, eating a whole fruit is better than juices, im diagnosed as a type 2 diabetes, and the whole fruit tends to rise less my glucose levels at 1h and 2h postprandial measurements. And yeah, there's something really important not mentioned in the video, the insuline respond, i suspect that a whole fruit rises less the insuline respond than the blended one, a massive insuline respond can explain why glucoose levels seemed lower, for a normal person of course.

    Here's my 20 year old self worrying about glycemic index, eating the entire package of 400g (sometimes one and a half) of oats and wholemeal choco biscuit, with 20grams of oil and sugar in equal measure per 100g. Really intelligent. I've been the vivid result of what happens with stupid paranoia. The same for the "combination of different food"

    I guess if the banana is blended it could get absorbed faster because you can swallow it faster, but then again you could have protein powder and fiber powder and a fat source in the shake, which would slow down the absorption again.

      That still doesn't mean it's 4x higher at all. The fiber still exists, therefore it still imparts intended effects. Though your other point isn't wrong. This is why placed like Jamba Juice exist.

      @@josho.9530 Yeah, also as I kept watching the video he said that with some fruits, the seeds get ground up and the oils get released, so then the glycemic index goes down. Meanwhile if you eat it you just swallow the seeds whole and they slide through you.

    My guess on the blending mechanism: When you blend it, the fiber is spread out more evenly in the fruit, so over all, it takes longer to digest, whereas when it is unblended, the fiber is less evenly distributed, so you are able to digest the fruit a bit faster, explaining why there is a slightly higher increase vs blended.

    What happens when you juice the fruit? Is all fiber lost and does it increase the glycemic impact?

      Insoluble fiber is lost and soluble fiber is mostly retained. Not all of the fiber is removed by juicing but it will naturally raise the glycemic impact of whatever it is that your juicing. Grapes and watermelons are about the worst fruits to juice due to the low fiber content and high sugar content.

    It also depends what else you put in the smoothie… if there is protein + fat + fruit + fiber, that would lower the glycemic load as well as rate of glucose/insulin spike.

    Gary could be referring to the study’s done on polyphenol oxidase and how that breaks down Flavanols in other fruits however how flavanols effect ones glycemic index why we need you to explain since Gary might not be the guy to explain that to the general public.

    While I agree with a lot and enjoy this content it’s so contrary to the growing studies and literature on UPF
    It’s not just about calories it’s also about the food matrix and eating non UPF (processed is fine).
    The more I catch up on your videos the more out of date it is.
    No one contests its calories but choosing specific types of foods can make calorie counting redundant.

    Great content! The problem with this spiking glucose nonsense is you need to know if you’re talking about a normal person, one with metabolic syndrome/prediabetes, or a diabetic. If you are metabolically normal person your blood sugar is tightly regulated no matter what you eat. A rise in glucose is a normal feeding response!

    Wow. I was gonna keep blending my fruit anyway, but that's crazy. It's counter intuitive. The body must have to work harder because we don't chew as well as we blend.

    nice and love it, one detail though, dr rhonda patrick claims to stop mixing banana into smoothies because it has a protein that oxidizes some important nutrients from the other fruits.

    There is a lot of discussion in the "biohacking" realms these days about keeping the blood glucose basically flat as a means to the longevity end (wait is that an oxymoron?)
    So, in that respect at least, minimizing the glycemic response seems like it would be a good thing for health, over many, many years. I think part of that line of thinking suggests that continually spiking your blood glucose is what leads to leptin or insulin sensitivity issues (I can't remember which...) basically that it gets overworked, damaged, and then this leads to T2DM.
