I work at Portillos. The amount of cake we put into the shake depends on the ounce size- 16oz gets half a slice, 32oz gets a full slice. Maybe too sweet because you put too much cake/syrup in for how big the glass was? Anyway, great recreation. Mayo was a great catch, you guys do your research.

Back in the Buzzfeed days with the giant foods and his cooking at home series that he did through Covid! I love his style of video making and I love that he still makes a mess any time he uses a stand mixer 😂
I tried this. It was delicious. It was more than I could do in one sitting so I split it in half and had it a second day. The best part was that as I finished it the second day, there was a big yummy glob of chocolate icing in the bottom of the cup. I felt like a little kid again! 🤣🤣

Moved to Glendale AZ for a new job and was looking into places in the area and saw there was indeed a Portillo's Got the shake, a dog, their sausage/beef sandwich, a burger, and some fries. Sandwich was the winner, but that shake came super close, such a hearty shake that really needs some wider straws to avoid cake buildup

One thing they have confirmed is true though, is that the frosting used to coat the cake is actually not house made, it's just your typical, store bought, chocolate frosting.

The lemon cake shake is a thing of dangerous beauty. Your brain still knows it's a super decadent treat, but the lightness of lemon somehow tricks my tummy into not feeling sick despite being stuffed with a slice of cake blended into a big ol' milkshake after finishing off a Maxwell Street.
Yeah I like you said that mayonnaise that's in the cake. All it is is oil and eggs and you're already putting those in most cakes. The mayonnaise cake came around when fresh eggs weren't as available during shortages and things like that, there's been times where someone uses the last of my eggs, so I use anything from a banana that I Mash, applesauce. You can use tofu, flex egg, all kinds of things

Not sure when you'll end up chopping chocolate again, but I would recommend a bread knife. The teeth on it just make it feel like it cuts easier to me...? There's probably some explanation, but definitely try it because a straight edge just feels like it slides too much to me.
The chocolate fudge in the ice cream basically makes this a chocolate shake with chocolate cake...way too rich. The beauty of the Portillos' cake shake is the contrast between the rich chocolate cake and the vanilla shake. That cake though looks legit!!
I know a lot of places that have started making shakes like this. First time I had one was at the Toothsome Chocolate Emporium outside of Universal Studios in Florida. I had a red velvet shake that came with a giant cupcake on top and my wife had the marshmallow crips that came with a large chunk of rice crispie treat on it
You don't need to add that extra slice of cake. Portillo's doesn't blend the cake thoroughly into the shake so you get chunks of cake and frosting as you drink the shake. Probably the best way to do it at home would be to make the shake without the cake first, then add the cake, and pulse it a lot resulting in some well-blended cake AND chunks.

Vanilla ice cream is a better bet than chocolate, but I tried many permutations. Also delicious and just as unhealthy was the cornflake shake, but it substituted strawberry compote for the fudge.
Mayonnaise in a cake makes it more moist as well in my experience. Family cake recipe is a chocolate date cake with oats in it too. Rich but not too rich you can't eat a whole row.
