    4 to 6 russet potatoes
    1/2 cup olive oil
    1 tbsp GirlCarnivore Over Easy or your favorite spice blend

    I tried this tonight and they didn’t turn out. I’m a rookie to pellet smokers and grilling. I put the potatoes wedges on a cookie sheet with holes in it. I cooked them at 350 for 25 minutes and they came out hard as a brick, not burnt, but raw. I was cooking them on the top rack so was that what I did wrong? I’m embarrassed to ask this question.

      Don't ever be embarrassed to ask a question! We're all learning. What pellet smoker are you using? There's a lot of factors here, but we'd suggest moving them directly over the heat instead of the top rack.

      it means theyre undercooked. if you find that cooking it longer leads to the outside turning into a hard brick before the inside turns tender, boil them for a bit first to soften the inside

      Boil your potatoes in salt water until just tender. Take a piece out of the water and cut it or stab with fork to check consistency. Throw them in a strainer and get all the water out. Put them in the fridge for at least 30 minutes to let them cool and dry out. This will lessen your time on the grill by far and help crisp up the outside.
