He didnt leave her, she left the order and he DID see her off and gave her 2 brand new lightsabers when he did, Anakin was very patient and kind with snips. He was very good to her, thats why her finding out he became darth vader hit her so hard.

Like Obi Wan, she is an important part of his past, and killing her is not as simple as say, killing someone like Yoda. The strong attachment is still there and it will always make Vader conflicted no matter what. Ahsoka is the closest thing to having a little sister, as Obi Wan is to a big brother. I feel like killing Ahsoka would bring more inner turmoil for Anakin because they had a close relationship.

Considering that Ahsoka in rebels scales higher than Anakin, Yoda, and Sidious in ROTS, and Vader was able to reverse her Mind Probing back onto her with little effort despite the fact that she was also being slightly amped by Kanaan as well really shows just how powerful Vader truly is.
