    I am going to try the heavy whipping powder to do my biscuits now that you can’t always get the cream in the store now. I will transfer to the jars for longer storage and use their containers for other purposes.. hope my biscuits turn out good using this method. If so I can mix a cup and store them in the freezer as well .

    I love creamers so I do make a powdered creamer because I live 30 minutes to a store and would run out then I’m doing without for a week or longer. I loved the liquid coffee creamers but learned how dairy has a chemical that causes cancer, soooo I make my own and am happy with it. Thanks for all you do Heidi.

  • @kristinb5121
    @kristinb5121 3 ปีที่แล้ว +4

    Thank you for this post. Dairy is the one area of food storage that I’ve got to get squared away. I’m planning to experiment with making yogurt, sour cream, a soft cheese, etc. If you have a thumbs up versus thumbs down list, that would be very helpful. I have a question. Do you think butter made from the heavy cream powder would melt similar to real butter? They leave some of the fat in the heavy cream powder, don’t they? I have butter frozen as well, but that would be gone fairly quickly.

    • @RainCountryHomestead
      @RainCountryHomestead  3 ปีที่แล้ว +1

      Since the heavy cream powder does not whip into a whipped cream, it would also not work well for making butter. I recommend going with the butter powder I mentioned and also have a separate video on: th-cam.com/video/ZBfgIqH1rZQ/w-d-xo.html

    I just bought the HH heavy cream powder in hopes of using it in place of fresh heavy cream (expensive!) for making 2 ingredient biscuits. According to their website if you mix it up and refrigerate it over night it will become slightly thicker.
    I have not tried it yet as I am doing inventory and moving my entire storage to different areas and my kitchen is a total disaster.
    Have you tried using it for 2 ingredient biscuits?

    • @RainCountryHomestead
      @RainCountryHomestead  3 ปีที่แล้ว +4

      Yep, it does thicken up a bit when allowed to sit in the fridge over night. Nope, have not done two ingredient biscuits but have used the powdered butter in replacement of the fat in making them to see how it would turn out: th-cam.com/video/ZBfgIqH1rZQ/w-d-xo.html

    • @RainCountryHomestead
      @RainCountryHomestead  3 ปีที่แล้ว +12

      It will last longer than that even in the container but you can repackage in mylar or vacuum seal in a jar if you are concerned. That powdered goat milk I have has an expiration date of 2017 but it is still good and I know it will still be good years from now

    I got some heavy cream powder but like you I'm not a fan of it in my coffee. My first experience was what you did trying adding it to the coffee. So remembering the Galloping Gourmet, he liked to use a little maple syrup in his altered concoctions like yogurt for sour cream. So, lower on the glycemic scale I used just a few drops to sweeten it up without making it sweet. I mixed a paste with my whisk, added a few maple drops and whipped it well then slowly added the rest of the water and it was much more palatable. Then I added some vanilla extract, as I love vanilla coffee without the gross syrup. I can't drink black coffee without cream as it upsets my digestive system, but using regional low acid coffees and cream I can have my beloved coffee. I got this, as a senior at 72, without consistent transportation I sometimes can't get to the store, like in the rain on my 2 wheel motor scooter 50. My cream spoiled and haven't been able to get to the store... So, this will be a great substitute the way I made it today.

    No, the hot coffee doesn’t work real well to ‘melt’ the cream powder. I really don’t mind the lumps because I put butter and mct oil in my coffee and that has a tendency to lump too.
    Recently we’ve found milk bought from the local stores, and we’ve tried several, tends to go bad more quickly than it used to so I bought some of the Nido that Alaska Granny recommends. If that doesn’t work we’ll try this brand. There has to be one out there that tastes somewhere close to regular milk.

      Blending it with the water in the blender first, then putting in the fridge over night makes it smooth and thick and works great that way. It is an extra step but turns out much better. One can just mix up only what they need for a few days at a time.

      I buy Nido too. Since my kids were little. That seemed to be the only one they actually liked served cold or made into hot chocolate. I used it during the winter of 97. The kids were home more than at school. Crazy year. We cleaned out the whole chest freezer the Big one. So I learned what to get again for replacements of what we used. The Nido whole milk fortified was one of them.

I am not going to test it but saw it in written reviews in the Netherlands written in Dutch. Also they said to add 1/3 more cup of powder than normal.

    Hello Heidi! I got this box of Dream Whip whipped topping mix. I don't know if you've heard of it before I would assume that you have it's been out for a long time it's expensive it's about $4 a box with two envelopes in it and I use it when I need to have whites for meringue or a whipped cream frosting whatever I want strong good Peaks to stay up my new egg beater works a whole heck of a lot better than my 30 year old one that had just died recently. but this stuff works great! I believe since there is powdered whipped cream there should be some other kind of powdered whipping cream available in a larger amount and actually whips up like heavy whipping cream. And, at a lower price. And out of curiosity does the whole milk taste like the regular powdered milk that you normally get at the store?

    • @RainCountryHomestead
      @RainCountryHomestead  3 ปีที่แล้ว +1

      I remember Dream Whip, I think my mom would buy it on occasion but I had forgotten all about it. Pretty sure it was out at least as far back as the seventies. I find the whole milk powder, especially the Hoosier Hill (compared to others I have tried) tastes FAR better than any non fat powdered milk.

    • @RainCountryHomestead

      I recommend getting whole milk powder rather than non fat. Then take 1/4 cup of heavy cream powder plus 1/4 cup of whole milk powder and add to two cups of water to make a pint. The best way to get it smooth is to mix in a blender or even use an immersion blender. Then chill. You CAN use the non fat milk powder but you will want to up the ratio of heavy cream powder. My guess would be 3/8 cup heavy cream powder to 1/8 cup non fat milk powder but you may need to experiment with it to find just the right ratio

I’ve experimented with white clam sauce double cream and adding some cream powder diluted into whole fat milk Are we getting the double fat richness of this Cream powder? I used to add dobs of full fat butter to my regular milk to fatten it up, will this help as well?

    Thank you for this very informative video. If I ever have a question about the powdered stuff it will be answered here. I only have one question though, one I've looked everywhere for about the heavy cream powder and haven't been able to find yet. After you make a jar of heavy cream, buttermilk, or milk with powder how long will it last in the fridge? I don't think I would really know when a jar of heavy cream made with powder went bad, I'm just looking for a rough rule of thumb, a week, a month? Because it says to make it a day before you use it for best results so I'd like to have some on hand ready to go. Thanks!

    • @RainCountryHomestead
      @RainCountryHomestead  9 หลายเดือนก่อน +1

      The link to the heavy cream is in the description box just below the video as promised, however, since this is an old video, it is possible it may no longer be available but you can simply click on the link to find out for sure.
      Once blended it would last as long as any cream in the fridge and yes, just like with any dairy, you would know if it was bad because of the smell. Average time would be about a week give or take a day or two

    When I saw this video I was hoping to see how you take this powder and make it into heavy whipping cream for things such as coffee and tea. It seems I have to boil my water or the powder doesn't dissolve very well. I've also noticed I have to stir the powder with each use. Have you found a way of making the heavy whipping cream and it not settling to the bottom of your jar?

    I just made Hoosier Hill Farm Sour Cream from their powder...
    This product is horrible! 😱 Made to simple directions and it was very runny. It was, also, very tart, like there was too much lactic acid. It tasted like nonfat dry milk and lactic acid. Disgusting! Horrible!!!!! Yuck! I can't even fix this powder, which was very pricey for what you get. I got the Cream Cheese powder too. I won't open it until Doomsday. Never buying from Hoosier Hill Farm again.

    • @RainCountryHomestead
      @RainCountryHomestead  2 ปีที่แล้ว

      Wow, this is the third exact comment you made just like this and I believe you already made it under this video. As I noted on the other video about the cream cheese, I happen to like it and if you never try it, you will never know. Their whole milk powder, butter powder, and heavy cream powder is great. I have not tried their brand of sour cream powder but that is because I read the reviews on it and they were not good so I decided to try Judee's sour cream powder as it had better reviews. It was not bad. One thing people have to understand is that all powdered dairies will still have the distinct powdered flavor but they can be used in many ways. I use powdered dairies all the time now for making whiles sauces and gravies and they work great. I use powdered butter in my bread making so I can save my fresh butter for spreading. As I said in the last comment exactly like this one, if you never try the cream cheese powder and try working with it, you will never know. There is no sense in buying something to try out then putting it away for when times are tough but never know of any good ways to actually use it because you were too afraid to try
