    Yes I love the simplicity! I find myself rotating only between like 10 favorite meals at any given time anyway so seeing repeat recipes consistently is less overwhelming on my brain! 😅

    Oh I can’t wait to try making those bagels! I make your seitan buns every week too! I keep 4 in the freezer and the other 4 in the fridge to have on the go. It’s awesome air fried then I slather the tofu cream cheese too! I use it for my ‘bread’ too for soups. In such case, I rub fresh garlic after air frying.

    I love the meal inspiration and that you put recipes in the description box. I'm looking for gluten free recipes because unfortunately I can't eat it anymore. I wish I could try the tofu seitan buns 😢 They look delicious!

    Thanks for all you do here! Now that it's winter I've transitioned to a hot savory oat groat breakfast..it's half cup cooked oat groats with high protein tofu cubes tossed in garlic and onion powder and air fried, steamed greens like chard or collards, forkful of kimchi and a tablespoon of ground nigella or flaxseed. And Sriracha. That's 20 grams protein and I have a simple smoothie with stevia sweetened pea protein powder, water and some kind of frozen berries. That's another 22 grams protein. I get tired of sweet rolled oats and change it up to savory oats in winter. Give it a try!

      Yum! That all sounds delicious. Having said that, I always go back to "sweet breakfast". I do enjoy savory occasionally but I prefer sweet warm bowl of oats at any given time :) I guess we all have our preferences.       Happy to hear you guys love my Tofu-Mayo. :) I found this yogurt at my local Walmart store. I can only find this "sweetened" kind at the moment. I used to buy Unsweetened Riviera Brand "oat based" Greek yogurt. That is the best tasting one in my opinion (plus no sugar) but now I can't find it anywhere close to where I live :(

    I really appreciate the simple versatile meal ideas that are inexpensive and don't rely on processed ingredients like store bought prepared sauces/marinades, since I prefer to use whole foods as much as possible 🙂
    Couple questions:
    1. Do you eat the buttercup squash with the skin?
    2. What kind of bulgur do you use for the bulgur porridge variation you showed? I'm never sure if the bulgur in the store is whole grain or not since the package doesn't say🫤
    3. Any ideas for a weetabix substitute that's available in the US? Also, are you ok with the fact that weetabix has sugar and sweeteners in it?
    Thanks for the inspiration! I really have to stop being lazy and make those seitan buns, for some reason I find it harder to make a big batch of something instead of spending as much (or more) time making multiple smaller meals.

      You’re welcome! It’s so important to focus on whole foods and make meals with ingredients we can pronounce 🙂
      1. Yes I eat the skin once buttercup is air fried. It tastes so good! I just make sure to throughly wash my buttercup squash before chopping.
      2. I buy brown fine bulgur. It tastes yummy!
      3. I thought weetabix would be available in US too! Sorry not sure what would be the equivalent. Granola always works too!
      I don’t mind bit of sugar . I don’t aim for perfection. We live in imperfect world, I do my best sticking to whole foods 80-90%. I don’t fuss about little sugar here & there as it’s a very small part of my diet. ☺️

    Thats actually kabocha squash. Butternut squash has a tan exterior.
