That's the best technique of filleting a flathead I have ever seen. I've been trying to work out where those two sneaky bones are for a long time. Thanks for the video.

Cheers Terry, and yep it’s the best way I’ve come across for sure. Bit harder than other ways to get good at but worth it 👍🏼

    BTW, the roe is great.
Flour, egg and bread crumb shallow fried.
    Highly nutritious, too.

There is a much faster and easier way. The skin of flathead fillets can be removed without using a knife. Start the fillet cut in between the 2 side fins leaving the front one attached to the head and the rear one on the fillet. Completely remove the fillet at the tail. You can then put the knife down. Using both hands, insert your thumb between the flesh and skin right at the second side fin. There is a little pocket there where it just separates really easily and your thumb will just go in. The fin gives you a hand grip for the skin. Then you simply use the other hand to pull the flesh and skin apart. Once you've done it, you'll never look back. Up to you if you bone it out after that but the tail half is boneless and then 2 boneless pieces out of the front half. See Tackle Tactics TV video. He's a bit slow but you'll get the picture.

Yeah have given that one a go but prefer my method. Is a very nifty way to do it but I reckon you get more meat and is just as quick (was taking my time in the vid to explain and make it easy to follow). Splitting the fillets in two makes them cook up really nice as well

I like that long cut you do splitting the fillet in two, I'll have to give that one a go, I used to skin them pretty much how you do it without that cut but having a razor sharp knife I'd often cut through the skin. I have been tearing the skin off by hand which works nicely but will certainly be giving your method a go next time

Yeah the middle cut is the best tip. Makes them easier to skin and easier to remove the pin bones. Also give you two thin flatty tails that get nice and crunchy

Certainly give that a go next time.
Different from the way i do it.
Still 8 cuts skinless & boneless, but i end up with a lg fillet & a thick belly flap. I cut the wings off as a snack.
The Hunter river is on fire atm, Flathead, Jew, bream. Lake Mac's fishing good to big Jew, Kingy's, Flathead, Whiting have turned up since the last prawn run.
Xmas traffic, I'm keeping away from the lake. 😂
    Cheers

I reckon it’s the bees knees. Was going a bit slow and explaining things in the vid but you can get through a lot of flatty quick once you get the hang of it. Yeah I’ve been hearing good reports! Seems the beaches are going off for good mulloway too which is so good to see. They’re what I’m missing the most since moving back down to the far south coast, seems there’s a lot less down here for some reason

Yeah, forgot to mention that one, Jew up the beach ( Stockton ) has been NUTS.
Burwood is producing too, but people keep that one out of social media ( It's a secret )😂
The floods really stirred the system up & has helped it fire.
Jew Sporn during floods i was told, your thought on that ?
      Cheers Louis

Yeah loved that little beach while I was up there. Mission to get to at night with all the gear which I liked about it. I went to a talk down on the lake before I moved home that had a few speakers on jewies and was told that about the floods and spawning by a dpi scientist. What the records show is that 3-4 years after flood events there will be a considerable increase in commercial catches of legal Jew. With the floods and increased size limit for the commercial blokes we hopefully see a top notch future for big fish!
