    • @Mugsi
      @Mugsi 2 ปีที่แล้ว +184

      Yeah, I remember that, too! At some point, the layers became so dense that it had more of a cake-like texture or something? Not bad, but not a croissant, anymore. I forgot what the ideal number of folds was.

      This was my first thought as well! Clearly a lot of people took something from that video :D
      @Nicolas Lanza Ferreira The principle of so many layers that at some point they are indistinguishable still applies. The only difference is that one contains yeast and sugar, the other doesn't. The yeast leads to the more chewy texture but doesn't really do anything for the layers.

    I learned a ton of cool techniques from this, thank you! Whipping the flour into the butter block and the indents when rolling out your dough are both brilliant, intuitive, and not something that I'd ever have thought of from the savory side of things.

    • @Ohanamie
      @Ohanamie 2 ปีที่แล้ว +2

      I was actually quite surprised to see the butter whipped with flour. This way is normally used to fold the "French method" (it's basically the other way around. The butter is encapsuling the dough) but for this method (called German method) it's not necessary at all. What's most important is the consistency of butter and dough. (They should be of the same consistency).
      But oh well I should try one time.

    8:03 i make little roll ups like these occasionally, but instead of sugar, i spread cream cheese on them, a little garlic powder, and sprinkle bacon bits on it. then roll it up and sprinkle parmesan cheese on them before baking them. the original version my mom made used diced onion instead of garlic, but i prefer the garlic.
    makes a great savory snack for parties or special occasions. the correct way to make them is to roll them up before they’re cut, to, save time and effort, but your cut scraps reminded me of them anyway 🤷‍♂️
    edit: they’re also just baked side by side in a ceramic baking dish, no individual containers

    so..having learned bread baking for these 2 years, and i was a fan of Yakitate! Japan when i was in highschool, i understand fully now what kawachi meant by high sugar content was in the dough..not at the outer layer, hence, the one burnt was the dough layers, in your test here, the one burnt was the sugar layer
