  • INSTANT POT COCONUT MILK WITH TAPIOCA & TARO
    This is a Chinese soup dessert that is creamy, delicious and not too sweet. It's great hot or cold, and very quick and easy to make using the Instant Pot.
    Ingredients:
    1 can coconut milk ( not coconut cream)
    1/3 cup small tapioca pearls
    1 1/2 cup taro root diced into 1 cm cubes
    1/3 to 1/2 cup rock sugar or to taste
    4 cups of water
    Method:
    1. Place everything in the Instant Pot.
    2. Plug in the Instant Pot and put the lid on.
    3. Manually set the Instant Pot to high pressure for 10 minutes.
    4. When the 10 minutes is done, let the Instant Pot naturally release for another 5 minutes. Then release the steam by turning the steam release valve. Once the float pin has dropped, you can open the Instant Pot. Stir the soup and enjoy!
    5. This dessert can be eaten hot, at room temperature, or chilled. When it is chilled, it will be like a pudding. Enjoy!!

    Hi Francine, I finally tried this recipe and it was easy and delicious. The only thing is that the tapioca balls clumped together. I didn’t stir to mix before cooking. Maybe I should I have?

      That’s wonderful that you got to try my recipe Laura. Yes the tapioca balls can clump together because the starch softens when they cook. I like to scatter the tapioca pearls when I put them in the Instant Pot so they are separated and don’t stick together. Happy New Year, too!

    Tried but didn't like it. 1) Way too much water. 2) Not creamy. 3) messy.
    1) replace coconut milk with coconut cream.
    2) replace 4 cups of water with 2 cups of milk
    3) Instead of 10 and 5 minutes, set 2 minutes on HP. Then unplug the cord and wait 15-20 minutes for the float valve to drop.
    4) Add a cup of hot water if too thick.
    5) eat with some crushed peanuts.

      Thanks for watching my video! Sorry, you didn't like my recipe, but when I tasted it it was creamy enough for me. I agree releasing the pressure by turning the steam release value does make a bit of a mess, so thanks for sharing your method! Never thought to eat with peanuts, but might give that a try one day. Thanks for your honest comments, I really appreciate it! That's how we get better. I like the way my recipe turned out, but food is subjective, and everyone has their own taste preferences. Cheers!!
