INSTANT POT CHINESE STICKY RICE | Loh Mai Fan

  • INSTANT POT CHINESE STICKY RICE
    This is a classic and delicious Cantonese rice dish that you can make anytime in your Instant Pot. It is also eaten at Chinese New Year or other special occasions.
    Ingredients:
    1 cup long grain glutinous rice (sometimes called sweet rice)
    1/2 cup jasmine long grain rice
    3 Chinese sausages
    1/4 cup dried shrimp
    4-5 dried shiitake mushrooms
    2 cloves of garlic
    2 stalks of green oils
    Sauce Ingredients:
    2 tablespoons Shao Hsing Chinese cooking wine
    2 tablespoons Soy sauce
    1/2 tablespoon Oyster Sauce
    1 teaspoon pure sesame seed oil
    1/4 teaspoon white pepper
    Do ahead step:
    Soak the dried mushrooms in 2 cups of warm water for 2 to 4 hours, until they have softened
    Method:
    1. Wash the glutinous rice, cover with cold water and soak for 30 minutes, then drain, and set aside.
    2. Wash and drain the regular jasmine rice and set aside.
    3. Soak the dried shrimp in 1/2 cup of warm water for 15 minutes
    4. Chop the green onion, separating the green part from the white part.
    5. Chop up the Chinese sausage into small pieces.
    6. Chop up the garlic.
    7. Small dice the re-hydrated shiitake mushrooms, and reserve the soaking water.
    8. Roughly chop the dried shrimp, and reserve the soaking water.
    9. Add the sauce ingredients together, mix and set aside.
    10. Using the saute mode of the Instant Pot, saute the chopped green onion(white parts only) for 30 seconds, add the garlic and saute for another 20 seconds.
    11. Add the chinese sausage and saute for another 2 minutes. Add the mushrooms and saute for another 2 minutes.
    12. Add the glutinous and jasmine rice to the Instant Pot and stir to combine everything. Then turn the saute mode off.
    13. Add the sauce and mix to coat the rice.
    14. Add the reserved dried mushroom and dried shrimp soaking water to the Instant Pot. The liquid should be about 2 cups. This liquid should be enough to just cover the rice. Add more water if needed.
    15. Put the lid on and set the Instant Pot on the “Rice”mode which will be 12 minutes on low pressure.
    16. Naturally release the Instant Pot for 5 minutes before opening. Gently fluff up the rice with a spoon and add the rest of the green onions as garnish.
    Enjoy the incredible umami flavour of this classic Chinese rice dish!

Thank you for creating a recipe where you only have to wash one cooking vessel and don't have to struggle to stir a giant clump of sticky rice with the other ingredients, and that is also not overly oily!       @@francineshuen Thank you again my sticky rice in the instant pot came out perfect. I used the risotto steam function and just enough coconut milk to cover the rice. I did coconut sticky rice served with chue chee prawns

    Hi Francine. Thank you for posting this video. I've been trying to make dim sum style sticky rice (non-Instant Pot) with minimal success. My rice would come out too mushy. Your method works perfectly!! Do you know if this recipe is scalable? If I want to make 2x the quantity, do I need 2x the water mixture in the Instant Pot?

      Hi Howard! Thanks for watching my video and trying out my recipe! I totally think this recipe is scalable. If you double the glutinous rice and the jasmine rice, I would double the liquid to about 4 cups. You might need to add more sauce as well to get the same umami taste! I hope it turns out for you! This recipe is totally worth it to double because it's always a crowd-pleaser.

      Hello, thank you for your comment, it made my day! I'm glad you like the recipe. I have often thought of doubling this recipe too, but I have not actually tired. I think you should add a bit less than 4 cups of liquid because liquid evaporates less when cooking with the Instant Pot. I do hope it turns out, and if you are feeding a crowd, I hope they enjoy it!

      That’s a good question. I usually just use the rice button low pressure for rice as it works and the cook time is not that long. If you do try using high pressure with shorter cook time, let me know how it turns out!

    Why did you do jasmine rice mix and not all glutinous rice? Glutinous is a sweet rice right?

      Hi there! Yes, glutinous rice is sweet rice. I just find if I use all glutinous rice in this recipe, the rice is too sticky. I like the texture better when I mix some jasmine rice with the glutinous rice. Thank you so much for watching my video and for your question! Happy cooking!!

    Can I cook sticky rice like normal rice in my instapot? Cover sticky rice with water and cook?

      Yes, you can, but because the Instant Pot uses pressure, you might need less water.

    Thank you for the recipe! I have found that if you want to double it, it is best if you do the sautéing in a separate pan. Once mixed add everything to the IP and add the rice, sauce, and liquids. Works great!

      Yes you can but you will need to brown all the ingredients in a pan before adding to the rice. I save time when i use the Instant Pot. Thanks for your question! 🤗

    Hi! I tried your recipe & technique & the rice turned out really soft & bouncy, but I noticed with my IP “rice” setting, even though it said 15min, it took over 45 minutes to start another count down of 21mins. Also there was a thick layer of burnt seasoning (from the sauce) & rice at the bottom. That was not the case when I closed the lid to cook. What am I doing wrong?

      Thanks for trying my recipe. For my Instant Pot, the rice setting is 20 minutes, and it takes about 10-15 minutes for it to reach high pressure. I am not sure why your IP took 45 minutes. Perhaps try setting your IP to 20 minutes manually and see if that makes a difference. As for the burnt sauce and rice on the bottom, make sure you start with a very clean pot, and mix the sauce with the rice so that it coats the rice. Also ensure there are no burnt bits on the bottom by stirring well before closing the lid. I hope this helps!

      Hi, I would just omit the dried shrimp if you don't have any. Fish sauce does not have the same taste as dried shrimp, do not add fish sauce. Thanks

    I tried your recipe, but the sticky rice came out a bit too wet for me, still edible, it is more like the texture of Jung. I think I might need to adjust the amount of water. It is tasty though. Thanks!

      Thank you for your comments. Someone else told me that it was too wet as well. I will need to update the recipe, and add about 1/2 cup less water.

      Hi Tricia, This recipe makes a medium size bowl full of sticky rice that can easily be enough for 4 people . But usually I will make this dish as a side dish for a party or family gathering at Christmas or Chinese New Year, and after everyone has had a scoop of it, it's all gone! So if it is being used as a side dish for a big gathering, I would consider doubling the recipe.

      No that is not normal. Make sure your Instant Pot liner is super clean before you start. When you sauté the ingredients, make sure to stir the bottom constantly so that nothing burns and sticks to the bottom. Thanks for your comment and for trying my recipe. Really appreciate it!

      This happens to some types of the instant pots. Try this: when you add the rice, keep it at the top, don't stir. It works very well too, you can stir when it's done.

    Hi, I followed on your recipe and method both times, and my instant pot showed BURN FOOD on the LED panel. 1st time I thought I was cooking it 3 min longer thar caused it to burned. Today, I followed your 12 min, still the pot showed food burn on the screen with 5% rice uncooked. And you didn't showed in your video on the pot of rice. Did your pot has burnt bottom too?

      Hi and thanks for your comment. Sorry, that your pot showed BURN FOOD on the LED panel and that your rice was uncooked. :( No, I have never seen that message come up on my Instant Pot. When I make sticky rice, it is not burned on the bottom. Did you have some food stuck on the bottom of the Instant Pot liner that burned while the Instant Pot was on?

      perhaps there was some rice stuck to the bottom. make sure you stir and mix the liquid in well
