INSTANT POT HAM CONGEE | EASY| 2 INGREDIENTS

  • INSTANT POT HAM CONGEE
    Congee is a warm and comforting rice porridge, also known as “jook” in Cantonese. A perfect food to eat on a cold winter day, or whenever you are feeling sick and need something easy to eat and digest. Ham congee is simple to make and the recipe requires only rice and ham to make it! Just add the ingredients and water to your Instant Pot, and let it do all the work for you. You can use a ham steak, a smoked pork hock or a ham bone with meat on it, to make this congee.
    Ingredients:
    1 cup long grain rice
    1 ham steak or 1 smoked pork hock or 1 ham bone with meat on it.
    8 cups of water
    1 teaspoon salt
    1/2 teaspoon white pepper
    garnish:
    chopped green onions
    sesame seed oil
    Method:
    1. Place the rice in the Instant Pot liner, and rinse the rice 2-3 times under cold running water. Wipe the bottom and rim of the Instant Pot liner dry with a towel, and then place the liner in the Instant Pot.
    2. Add 8 cups of cold water to the Instant Pot
    3. Set the Instant Pot to high pressure for 20 minutes (porridge button), and let the Instant Pot naturally release completely (this takes about 30 minutes). The Instant Pot is safe to open when the float valve (“pin”) has dropped.
    4. Take the ham out and shred the meat. Discard the bone. Place the meat back into the Instant Pot.
    5. Add 1 teaspoon salt and 1/2 teaspoon white pepper and give the congee a good mix with a spoon or whisk. Press the Keep Warm button to keep the congee warm.
    6. Serve the congee in a bowl with a drizzle of sesame seed oil and some chopped green onions. Enjoy!

    If I double the quantity, will the time be the same?

      Hi John, yes the time will be the same, but it will take longer for the pot to reach high pressure. Hope it turns out yummy for you.

    Is the recipe the same if I use short grain sweet rice?

      I don't think so. The recipe calls for long grain glutinous rice.
