So darn cute the way you pronounce dandelions!
The most ironic thing I’ve ever witnessed was when my sweet neighbor, a recently recovered alcoholic, was in his yard killing every single dandelion with an herbicide. The irony, of course, is that dandelion tea is supposed to be extremely beneficial for liver health. Over-indulgence in alcohol is harmful to the liver. Those dandelions he so diligently killed would’ve been so good for him. 🌼🌞

Hi. I used tho travel to Phillips, WI several times a years. Great folks In Wisconsin! I haven’t made any jelly with Splenda. I understand that you need to use the low sugar pectin. Lots of opinions out on the internet about Splenda jelly….some good and some bad. If you have never made any jelly with Splenda, my advise would be to make some Grape or Apple jelly out of juice and see how it turns out. We have videos on our channel of these jellies with sugar and sure jell but the should be easy to adapt to Splenda and low sugar pectin. All the best!

Thanks for this video, it's so helpful! One question - do you boil (or bake) the jar bands as well? Or just the lids and jars?

    • @useful.knowledge
      @useful.knowledge  2 ปีที่แล้ว +1

Thanks!! The bands don’t require to be warmed up. I do wash them. I put the lids in the really warm (not boiling) water. I turn the stove eye to a low for this. The jars need to be hot which is why I put them in the oven at 250. This basically sterilizes them but also keeps them from cracking when you put the jelly in them.

My understanding is that the roots have the most healthful benefits of all the “weeds” in yards but that is only true if you haven’t used roundup in the yard.
I haven’t ever come across any healthful benefits regarding the flower.
Pectin is now being criticized in scientific organizations but I’ve yet to find their scientific research for those claims.
On to my further research of dandelion!😀

How would you store your flowers between picking them and getting enough processed (sorting yellow from green) until ready to make jelly? Can you just put in fridge? Would you put in water or keep them dry?

    • @useful.knowledge

Hi. I would put them in the fridge dry. They may look wilted but will be ok. Also you could just pick and process half at a time. What elevation are you at? I am at nearly 3000 feet, so boiling is at a different temp and the charts with the pectin say to boil longer. I tried Sure Jell, wasn't happy with how soft the jelly turned out. So I tried Certo, and it failed altogether. I had dandelion syrup. Put most of the syrup back into the pan, reheated, then more Certo. Still too soft. This happened with our pepper jelly too. I don't want super-firm jelly, but it shouldn't move around like a cold honey.

Hi. I just checked and my gps says 750ft. You peaked my interest about what’s going on with your jelly. There is almost zero good info out on the internet. Also most folks are talking added processing times but what they are really discussing is water bath processing not the actual jelly making. At 3000ft your boiling temp is about 206. That would mean your jell point is about 214. If you run that full rolling boil for too long and too far past the jell point, your jelly will become a syrupy mush. That could be why the sure jell recipe only calls for one minute of full rolling boil. If you boiled for longer than one minute after adding sure jell and then boiled for longer than another minute after the sugar is added, you probably boiled too long. I would try again on something that doesn’t take up large amounts of time (maybe try it on grape jelly). Just purchase some good grape juice and try the theory. We have a grape jelly video using store bought grape juice.
I’ll be interested in hearing if this works!
One more thing with the dandelion jelly, it does need the lemon juice to help it set.

@Useful Knowledge a coworker suggested putting the syrup into plastic container and putting it in the freezer, make freezer jelly out of it. What do you think?
I believe I may have boiled it too long.
To sanitize the jars, my dad fills them about 2/3 full of water and microwaves until hard boiling. Seems to work fine.
      Thank you for replying.

Hi. Your Dad’s method is similar it what I learned while growling up. I started washing the jars and putting the jars in the oven at 250f because I didn’t like hot water splashing on me. You could definitely try making it into freezer jelly. I might actually be good like that!

I put some in a plastic container and put it in my freezer. It is about the consistency of cold applesauce. It seems to have mellowed slightly, and it’s good! I am now in the process of making lilac jelly.

Thank you for this very easy video. Just made mine. And how wonderful it is to here this ping. It taste just like honey. Thank you from southern Texas. Pray for us as we try to protect our homesteads. As there are at least 6800 illegals crossing over a day. And no it's not women and children but men. Bringing diseases and drugs. We are not allowed to shoot at them are we get arrested for defending our homestead. God bless you. And I got 8 jars. Golden yellow. Strawberries next.

Hi. Thanks for sharing! God Bless You and I hope the illegals situation gets better. I have three German Shepards that are just to protect the homestead but we don’t have your issues. We mostly have methheads that like to steal to support their habits. They really don’t want to deal with the dogs so they stay away. Enjoy the jelly. I just noticed that we’ve got some starting to blossom out here in north Alabama. Thanks!
